ann peeples Felix-looks and sounds delish! Thanks, Ann! I was really pleased with how it came out. Tonight was my last day of cooking for a bit, since we now have more than enough leftovers (although I will have to make lasagna soon, since I still have ricotta). Artichoke and ricotta stuffed chicken breast, and sliced potatoes layered with ranch dressing, grated cheddar, and grated Parmesan. The filling for the chicken needs something, but I'm not sure what it is. I'll have to work on it.

Shrimp, sea scallops, and mussels with fresh pasta in a light white wine garlic sauce. Weekend cooking with my husband is a blast!

Tonight we're having MH's famous meatloaf which is much better than mine. He has a certain je ne sais quoi with meatloaf.....maybe it's the peppered bacon on top......I really don't want to find out because then I'll have to make it. I am in charge of the smashed potatoes, gravy, fresh (!!) peas and probably the clean-up.

Tonight is leftover tilapia (mayonnaise, Cajun seasoning, dill and Parmesan sauce), leftover lima beans, leftover tropical mixed fruit, and leftover potatoes with ranch and cheddar. It's also the night I clean out the refrigerator since the trash goes out.

Tonight was flat iron steak, marinated in tequila, lime, ancho chili powder and olive oil, grilled and sliced. Had it in flour tortillas, cheese, lettuce, pico, and sour cream. Killer!

I accidentally defrosted pork (read: I set it on top of the refrigerator while I was rearranging the freezer and found it two hours later), so I made a casserole. Stuffing mix, diced pork, mushrooms, broccoli, black-eyed peas and cheddar cheese soup.

That sounds and looks good, Felix! Was it lean pork like loin or tenderloin or did you use a cut with a little more fat? Next time you make it top it with some strips of bacon...

LOL! If I'd had bacon defrosted, it would've ended up in there. Everything is better with bacon! They were boneless loin chops, the ones with the little strip of fat down one side. I did use a whole stick of butter with the stuffing mix, though, so I had plenty enough fat.

We got home last night from Pittsburgh so dinner was quick. I made chicken, broccoli and fusilli. Tonight is beef short ribs braised in red wine with onions and garlic. Accompanied by potatoes.....MH wants mashed, I want fried.......and asparagus.

Last night was grilled chicken tempura, white rice, and braised baby bok choy. Tonite is La Marca Prosecco - a few glasses, and don't care about food!

Stand up taco's last night: Carne Asada Mexican style (beef, cilantro, red onion) with the addition of some cheese, + green LV taco sauce, and my bbq sauce blend...lately I've been frying my tortillas like I used to do in the 1970's...I'm just craving more flavor than the dry toasted tortilla in a black iron skillit brings... I call these "stand up" because I walk outside with 1 taco and a paper plate and look at the stars, go back in for another... I start out with my bbq sauce blend on them, and end up with green taco sauce...lots of sauce / salsa variations with 7 taco...

Tonight...SOS Marine Style (with ground beef)... Quick and easy with pre-cooked beef from my freezer, wheat bread, and gravy... Yum... I just got another batch of applewood smoked salt today so I think that's what I'll season it with... Even though I wasn't able to build a roof over my grill this past fall, I've still been able to get quite a lot of grill time in this winter, now that the great deluge of December is over (with over 50" of rain, not much snow)...
