White Chili {with beans}

Official Recipe of Bistro Bistro - Arlington, VA

1/4 cu. Vegetable oil
1 cu. minced onion
2 Tbl. minced garlic
1 lb. ground turkey
2 lb. uncooked turkey breast - diced, skin removed
2/3 cu. pearl barley
2 cans (30 oz) Garbanzo beans [I usually use Cannellini]
1 Tbl. chopped Jalepeno peppers [chili peppers for the timid]
6 cu. Chicken broth
1 tsp. marjarom
1/2 tsp. ground savory
1 1/2 Tbl. arrowroot

Shredded cheddar or monterey jack for garnish

Saute the onions and garlic in the oil approx. 5 min on low

Add the cumin and simmer another min.

Add the ground turkey & turkey breast; cook until slightly brown.

Add all the remaining ingredients (except the cheese and arrowroot)
reduce to simmer, cover and cook 45 min, stirring occasionally.

Remove cover and continue coking another 15 min. Thicken with arrowroot mixed w 1/2 cu water.

    a_noid, don't take this personally, but the person who invented "white ***** " should be drawn and quartered. (I can't even bring myself to say the word in the same sentence as "white").

    Don't be annoyed. Come on back to defend your offering. How did it taste? Did it improve with a day or two in the fridge. Compare it to a traditional chile. Some of us are open to new food experiences. I tried a white version of stuffed cabbage and the result was as boring as the more traditional, but at least I tried it.

    I didn't mean to stir up a hornets' nest, I just was looking for some opinions (and I sure got 'em.) After trying this at the restaurant, I asked for the recipe, so, yes I like it. We have it whenever we have leftover turkey and we are tired of turkey tostadas and turkey and waffles. It's something different. If you don't like this version, Google "white chili" on the web; I think you'll find a few other recipes.

    But we LOVE it when someone stirs up a hornets' nest!! That way we can all jab and poke but we're quite harmless actually. Like clothier said, don't take it personally!

    Yeah ! It's kinda of like hamsters in cages in the pet stores .... you just know it is wrong to jab and poke at them ... but its just soooooo darn fun !!!

    Actually, all this playful banter sounds a bit like the typical dinner table discussion with the kids re the introduction of a new dish. Our response always was, "Well, at least you have to taste it.", which I'm pretty sure is universal. And you know what? Years later those same kids are asking for the recipes for those same things.

    A noid (great name!), as message boards go, this one is filled with kind and sensitive folk - they just don't know how much fun it is to watch them reveal all their inner uniqueness. Then again, maybe they do, and maybe that's why they're here. Thanks for your willingness to give us all a target, and then dodge the arrows - it's fun! John

    Okay, here's my humble opinion: "white chili" has its place in the "chilexicon." One of my favorite places in Metro Atlanta, The Universal Joint in South Decatur, had "white chili" on the dinner specials Saturday night. It was made with chicken and navy beans, and - LORD HAVE MERCY! - was it exquisite! Next time, I'll order that with a side of tortilla chips, or - when I find out that they're again offering it - I'll trundle over to the bodega around the rincon and buy some flour tortillas.
    Having not been born in Texas, I like chili with beans just fine. I'd be as grateful for the Texas "bowl of red" version were I out there, podnuh, as I am to have the Cincinnati one all five ways... it's as important to me as Hudepohl Beer, and I like Hudy (WHEN I can buy it!).
    Hmmm. This makes me wonder if anyone has tried making a white style of chili using chicken but without beans, i. e. a "bowl of white." I'll check back directly.
