Grapes in tomato based sauce? I can't see how that would be a plus. I just think restaurants do it to appeal to the chi-chi crowd, in much the same manner that adding beer to chili would appeal to macho beer drinkers. The two markets might after all correlate very well.
 
Me though I dismiss both as marketing gimmicks and order something else.

Why add plain water when you could add something that would actually add flavor to the dish.  I do add a darker or amber beer to deglaze my chili pot after browning the meat.  It adds richness to the dish

As I recall, Clemenza added red wine to the tomato-based pasta gravy he made for his "soldiers" when they "went to the matresses".

My Italian Grandma frequently added a little homemade red wine (grandpa made it) into the Sunday gravy. It's a fairly common add in. I do it often, Good Italian cooking!...oh and I sometimes put beer in our chili...

I don't think it taste any better putting chili on beer. Sounds awkward for me never tried doing so.

My personal 2¢.  I've been putting beer in chili for 40 years.  I am a strong dark German beer lover, like doublebocks, however I only used a dark beer once in chili and I didn't care for the overpowering flavor enhancement.  I use lighter beers, but not light beer.  IMO it imparts just a bit of flavor that I prefer.  And I put in 2 different kinds of beans.  neener neener neener!

I agree about the dark beer. Yuenglings Black and Tan worked whenI used it, tthough.

I don't see the mystery here.
Added at the proper time it deglazes the pot.
That, not flavor, is its primary function.

Guinness is nice in a good beef or lamb stew.
 
I never put beer in chili. I know folks who put dark rum in chili.

I always add beer to chili, it adds a flavor that I enjoy. I usually use 3-4 habaneros, 3 jalapenos, 1 ghost chile, and 1 scorpion pepper, I think beer brings out their flavor of the chiles better.
