I prefer birch syrup made right here in The Mat Su Valley. Tastes similar to maple but has a more earthy flavor. Having brewed homemade birch beer from scratch; I really don't see birch syrup as much a birch flavored sugar syrup. I will have to look it up; even birch flavored sugar syrup sounds interesting, and it may be much sweeter when concentrated. Bart

As stated in an earlier post, Birch syrup is made with only birch sap and heat. That's all. Same process as maple syrup.

I made raspberry syrup over the weekend with berries from my father in law's garden. It is superb!! I will use some of it in homemade BBQ sauce.
