Dearfolk, Bet this would be even yummier with a side of scrapple, homemade bread, and homemade apple butter... but scrapple doubtless isn't Kosher enough for the Borscht Belt. Back to the old drawing (and quartering) board, folks. Easy Bein' Green, Ort. Carlton in Athens, GA. P. S. Plenty of people eat dandelion greens, so I see no problem at all with milkweed. But beware - the stems are supposedly poisonous. P. P. S. Dylan Thomas may be hiding under the bowl.

I'd eat this if I were a deer, an elk or a cow.

Looks like something some Survivor contestant would have to eat! Blechh and the green juice that is with it, what is that? Dont know if I am spelling it right but looks like regurgitated cow stomach contents!

You should see the greens that Mamaw Smith cooks in the spring. Fortunately they taste better than they smell or look. Paul E. Smith Knoxville, TN

To all, We eat the butt and more of a cow, the ribs of a pig along with the hocks, all of a chicken. We eat liver, sweatbreads, sausages(?),and parts of goats and sheep. We eat scallions, garlic, onions, ramps for God"s sake, cabbage; you name it. Why is this so unusual? BB

This polk salad sounds interesting...thanks for clearing that up:) And in answer to the question about this being unusual..my reason for thinking that this "plate" is disgusting is because the way I was brought up living in the City, we never ate this kind of food. I have since tried many things after my childhood and find most to be not to my taste. It is unusual for city folk like me to eat alot of what my country friends eat. They laugh at me too:) I must say, since I have grown up, I have tried and keep trying new things...broadening my horizons I think it is called However, if it looks like that picture above, I would pass on it for sure.

I just went and looked up what ramps are...never had them, they sound yummy to me though, anything that has onions or garlic is a for sure tummy pleaser! Where do you find them? And are they only grown wild? (puts ramps on the grocery list)

To all, Ramps are basically wild spring onions. They are prevelant in West Virginia, but we get them here in Maryland too. I do not know of a grocer who stocks these but you can find them at the local farmers market. There is a restaurant in Berkeley Springs WV., called "Lot 12". It is excellant year round, but in the spring they have lots of ramp specials. The ramp soup is astonishingly good. BB

"Poke Sallet Annie". That was Tony Joe White! Ramps are popular in the mountains of western NC. Eat some and you'll stink like hell for a day or two... (Don't ask me how I know)

I better hide them if I ever find them from my hubs, he stinks like hell just from garlic and onions! LOL! I still think they would be good but now maybe just in tiny portions:)
