So after one month of stripping and sanding here is the out come. I used
Por-Strip, same maker of Por-15 rust proventer. Thats stuff was a time and lung saver! lol  In one hour and ten minutes of powerwashing this was the results. Por-strip removes about 80+ percent of the paint with two coats. thank god  this part is over.

Other then just stripping and sanding. I add the Stainless side walls to the hood. Next is hooking up the propane to the fryer and stove top.

I put the walls up so i dont have to clean everything to the left and right of the walls from grease. just trying to keep fat from going every where.

I think its a good idea. But I'd plan on using quick connect gas fittings so you could pull your equipment out and get behind it to clean the walls once every couple of months. The area above your equipment can be done much more often but the area that you can't easily access behind and below will need cleaning also.

we have the same roof height and length in the truck. I'm going to start a new thread here soon. that door that you made on the inside is it just framed in aluminum? I'm thinking of pputting the sink along that wall to gain some space what do you think?

If your talking about putting your sink across the back wall.....I think that's a bad idea. You need to be able to move equipment in and out and if you put the sink there you'll have to move the sink, plumbing, holding tanks, and maybe a water heater. Don't block the only door that allows you to move in new, or replace equipment. One other thought never put a sink directly in front of a service window. Your sink area can at times look like a disaster and you sure don't want your customers looking at a pile of unwashed pots and steam table pans. Customers judge the entire operation from what they can see through your service window.

Yeah Jack is right. I wanted to put it there and it fit great but after thinking and looking under the truck, I saw that the frame would be in the way of the plumbing. Also there really wouldnt be any room for what i wanted in the truck. The inside wall is 2 inch by 1 inch rectangle aluminum tube. The door is 18 inch wood door. I took it off my kitchen pantry.

You took it off your kitchen pantry?  Too cool. I thought I was the only guy in the world that would do something like that. Way to go. Your going to do well in the food business. Very cool!

I understand. That was the one i was talking about. I have a picture on this thread with my sink and handsink on that wall. Thats how i wanted my truck to be set up at first.  But if you have any other question just ask. And good luck, you'll have alot of fun

hahah yup you have to sacrifice whatever you can. lol As for the sinks on the inside wall.... they fit fine but when i looked under the truck and saw what i would have to do to make the plumbing work around the frame of the truck. Plus thank god didnt put them there. my frig wouldnt fit anywhere else. i can not open the door if put it anywhere else in the truck.

once I put the waills up I'm moving everything around and see what set up feels the best before screwing anything in place. how Much space do you have inside?? I have a 12 x 6.5 area. tight space .

Yup our truck is the same. Its tight, but it "seems", as of now that i will have nice work flow. Your lucky if you have all the equipment to put in its place. I had none of it. I used dimensions from books and the web.

well I still don't have all the equipment. I've been getting a lot of it at a local auction that has amazing prices.my set up is identical how I want it. The only thing is the sink that I'm not sure where it should go.

Yeah placement of the sinks in general is the biggest pain.

I got it from homedepot online. lol its was about $120. Sierra Horizontal Sliding Vinyl Window, 48 in. x 24 in., White, with LowE Glass and Screen. I made the awing part and this weekend i will be making the serving shelf.

Something to keep in mind, and was also a requirement for me, is to get your windows made with tempered glass. Much safer than regular glass for you and your customers if a window was to get broken.

I got some work done. lol I built my service shelf. Add some 12v lights (want to get two more) and checked my plumbing for leaks and how well it works. I also got alot of the little stuid stuff done like painting parts, etc... I'm going to post pictures tonight. I got my lights for RandPcarriages.com

My shelf isnt totally done i just made it and hung it up. Still have to make it work. Its 6ft long 14 inchs wide. I used 3/4 inch aluminum square tube as the support, a S/S continue hinge. The lights are 12 volt, have 2 fluorescents 8 watts and give off 600 lumens. They have a switch on the fixture which i liked. I have a master switch in the front of the truck. They work great. Next on my list is the propane!!! I'm tired of talking about hooking it up and just want to do it already. I'll post pictuers step by step of that.

So i completed my service shelf. I used s/s 1/8 cable, "eye" bolts, and s/s clips to hold up the shelf. As for locking it down to the truck i used rubber stoppers from keeping from banging out the side of the truck and 2 mini rubber hood holddowns to secure it down.

are the corners at all remotely sharp or pointy ? if so get some rubber on them, that stuff will cut you like a razor blade, so many times I caught my arm on my gen top and sliced myself before I rounded the edges.

Yeah the corners are sharp I'm going to round them out. I'm going to add Black edge Trim Lok. Its snaps onto the edge.

I have a 27inch sandwich unit at the front of the truck across from the sink. It has a very deep compartment. I also have a frig going on the right side at the back of the truck next to the table.

What i did for the last two/three weeks....
I started to connecting black pipe for the propane.
I made side walls for my deep fryer.

Lol thanks. It was the first time i have ever bent metal. Beginners luck i guess. I used 22 ga S/S I used 1/4inch bolts and wing nuts. So the side walls can come off and come apart for easy clean. Oh code says you only need a 8 inch shield to seperate open flame from a fryer. The walls are 15 inch high. I wanted to make it higher then the fryer. Just in case.

 I can still hang the baskets. I took that wall bracket mount from one i saw at a restaurant supply store. lol  And i was thinking about how high i have to lift them but that was the height of the s/s i had, so i used it.

Sweet hopefully they will. Texas is a cool state. worked in houston for a few months on an internship.  Loved it there. Hope you find some cool trucks down there. There will be a lot of taco carts and tex-mex cuisine. let me know how it goes.

After running back and forth to home depot a million times, i finally plumbed all the propane lines. I used 3/4 inch black pipe. I have two high pressure and one low pressure regulators. A local propane place made me flexible pig tails that connect the propane tanks to the regulators. I am just waiting for the 3/4 inch flex hose to connect my stove top and fryer. Will post pictures soon of the final outcome. Oh... I checked for leaks.... and there wasnt any! Plus i had someone install propane for a living help me out. lol What a few burgers will do. hahaha
