I'm not going to lie, I filled my holes with weld, but I also only had about 20 holes. lol It worked out great tho. I filled them in from the inside and then sanded the outside. The small pin holes in the weld i'm going to use fine bondo to make a flush finish. I'll take pictures of the filled holes and when there sanded. I'll send you the pictures tomorrow night.

 
How are these weld-filled holes working out for you? Planning on doing the same thing for my aluminum stepvan walls. Only have about 6 relatively small holes to fill...

Yeah welding the holes worked great. just have to go slow to pool up the weld into the hole. try it out on a test piece.

Its been to long since i posted anything good on this thread. lol Summer is full of working on other stuff besides the truck. As of right now I'm stripping the truck of its paint cause the last paint job was bad. It is the worst part of this build. But i FINALLY got equipment! 27 inch sandwich unit, 24in griddle/4 burner comb, and deep fryer. The Fryer and griddle combo is new. I love craigslist. Nothing is hooked up yet, I still have to add a divider between the burners and deep fryer. I'm also going to add two s/s walls on each side of the hood. I want to try to limit fat and oil from going all over the place.

Thank you. Yeah the paint job was bad and the truck on one side was weathered and chipping so i had to do it. Its the worst part. But anyway, I do not know how high the wall has to be. The equipment guy just said there has to be something to seperate the two. I have seen sheilds that chip onto the fry that are about 16inch tall at another equipment store in Newark, NJ. I'm going to have to find out more info about it. I'm guessing i have to talk to a fire marshal or look into the national Fire hand book.

hey, MIke it looks great good job. the equipment looks good. call the Hd he will tell you how high the shield should be.
also the fryer manufacture sells the sheilds for there fryers as an option. but i would make one out of s/s much cheaper.
we should get together call me when you have time.

Does anyone know if the fryer has to be 6 inches way from the wall? I've see many truck that equipment is right against the wall or 2 inches from it. Does anyone have pictures to post of what they have done. Thanks

i think what's keeping it from not being flush may be the gas line hook ups if they are running along the back wall. My grill is about 6 " from the wall b/c of the regulator on the back. I'll get a pic of it tomorrow

There has been a bunch of talk here on that question but if it were me I'd check the local regs. And (lol) before you ask who to consult that depends on your city, county, and state. While your at it ask about what surface requirements are required behind your equipment. SS, insulation, what ever.

If your doing a search here that's very cool, but again I would suggest you speak in person to a local in charge type. And if and when you do be careful. They may say things like we advise this or that. That's code for it's not in the book (the law)  but we think it should be the law.
 
BOCA is a code that is written by lobbyist in DC. It is then adopted (or not)  by cities, states and counties.  
 
Some local inspectors try and enforce BOCA codes even though they have not been adopted locally. That happens a lot here locally.
 
Sorry to say it's a thin line but if you are sharp in your dealings with the code masters (lol) plumbing, electrical, fire dept, etc, you'll do fine. But if you write down a list of your questions and go sit down with them and make very careful notes on their answers you'll be way ahead of the game. If you don't understand the answer ask again and again until you know in your mind that your 100% sure of the answer. Then read their code books to make sure they are selling you the straight dope. Always remember their job is not to help you get into this business, but to make sure you do it right. Your job is to open your doors but in a legal way that is in compliance with the rules and regulations.
 
And I'm not telling you to try and cheat your way thru this process, just that you need to know the code as well as they do. And if you don't they will put you thru a ton of hoops that are costly and time consuming. 
 
Don't think after reading this it isn't worth it it is but you can't go into this business without having your act together.

Thanks Doc. I have the HD on speed dial. I do not proceed with anything w/o asking first. All the elected officals have no clue what a food truck is in my area. There is so much gray area its not even funny. lol

Zhorzh, ask Zarick if he remembers the truck he stretched for Joe.....I drove that thing for several years.  This truck was stretched about 10 feet and had a tag axel.

unless you are over 7ft tall you will fit just fine in a step van AKA BOX TRUCK  not a regular van

Got a question for OP. How tall is your work space? I've been looking at used vans and they all seem like you couldn't stand up in them. 

My truck is 73 inches tall. I'm only 5' 10''. So it works for me. Cleaning the ceiling is going to be easy! haha. I fit fine. I don't hit my head or anything. But I know there are 7ft model trucks out there. You can come and see mine if you want.

I'm 6'4" and my truck has low over head as well. I'm hoping that the lower interior ceiling height will allow the truck exhaust fan to remove the hot air more quickly. Keeping my fingers crossed. LOL
