I'm gonna sell hot dogs off a Top Dog Trailer here in Houston, Texas.  I'm gonna do Chicao/NY/Cinn style dogs.  I was under the impresion that in Chicago the use of S. Rosen Poppyseed 'par-baked' rolls were the standard.  Just leave them in the bag/box and steam them.  I just talked to an Alpha Bakery rep and she said they are not 'par-baked', but fully baked.  I want to use the BEST buns.  Somebody set me straight....please.

        ..the coneys in Cinci generally use a smaller hotdog and bun than a regular dog..of course there is no reason you cannot make them with normal size dogs/buns..

                    Now I may be screwed up, but that's my aim.  Here in Houston, thise literally doesn't exist.  A city of over 4 million.  Festivals/events every weekend.......Man, a guy has to be stupid not to do this.

                    I AM going to do this.  I hope to have my Top Dog within 4 weeks.  I can hold out till then.

                    We gottta hang together or we shall all hang separately.

                        Red onion sauce is simmered onions in water corn syrup paprika. salt pepper etc.

                                  S. Rosen makes both a PLAIN and POPPY SEED bun. In New York, PLAIN individual buns are used, not like the clustered buns you get from Wonder Bread in the supermarket (though Wonder Bread Foodservice also delivers individual buns to restaurants only.) We have enough regional producers so you don't see any S.                                     In my area, there are NO outdoor vendors, period.  In the Metro-Houston area, it boils down to 2 options.  Sonic chili/cheese coneys, or James Coney Island.  Now James coney Island is a Houston institution, dating back to the40's or 50's.  They are wiener/bun/chili/onions/cheese dogs.  Not bad, but not a big dog like the above mentioned places.  I think the Cincinatti Dog will satify the the people that expect a James Coney Island, however, Houston has become a melting pot of newbies that don't have any affiliation whatsoever.  They come from all over.  That's the gist of it.

                                    Red onion sauce is available commercially.  I made some myself and love it, but to supply my cart, I'd rather buy it.  Minimize my labor (hours), maximizes my profit...AS LONG AS IT IS A QUALITY PRODUCT.  Maybe some featured items now and then to get a reality check.

                                    Just got my quote...approx $8K with options....I'm doin' it...!!!

                                        You may want to contact Al Gross in Houston. He reps Vienna Beef and a true Chicago dog is a Vienna Beef dog. He has been very helpful getting my cart business up and running. Shouldn't run any more than a Sabretts. I'll PM you his contact info if you're interested.

                                        You're good to go. Dallas is much the same way and the melting pot of NYers and Midwesterners is my target customer. Cost is not as big an issue as my intention is NOT to compete with the Home Depot vendors who sport two .13 Oscar Meyer dogs, a 1oz bag of chips and a canned soda for 3.50 - not that there's anything wrong with that model. It's just not my playing field.

                                                  Whoever said the NY dog is a Sabretts or a Hebrew (maybe a Nathans) on a plain wheat bun with kraut, the cooked onion sauce and the brown mustard got it right.

                                                  The Sabretts are the "dirty water dog" not because of NYC water, which is actually pretty good, but because the vendors keep them over night in hot water baths. Or used to anyways. The Sabrett has a thicker skin that only gets boiled, never steamed or anything else.

                                                    Marathon's Sabrett and Tremont brands of Onions-in-Sauce in #10 cans seem to show up in pockets all around the country, and is a top notch sauce. Two recent articles about the sauce after the developer of the recipe passed away in January, 2009:
