One of my go to quick dinners was Taco Potaoes:
I made regular taco meat(1 lb ground beef, taco seasoning), added 1 can of hot chili beans.
Bake potatoes, cut open, salt potatoes, top with taco, chili beans mixture,then cheese.  Have all the taco fixins available-lettuce,tomatoes, onions, salsa,sour cream,corn chips.
Easy & one of my family's favaorite meals.

A cheese crisp...flower tortilla and kraft cheese,folded over and grilled...add a can of tomato soup with generous amounts of a nice salsa added...great for a winter snack!!

Those taco potatoes sound good.  How's this for quick:  Snap a pull-top can of Beanie Weenies and eat right out of the can.  Got that one from Frank Sinatra, who was known for eating pork n' beans right out of the can.  I can't sing worth a flip, though.

Joe - this is exactly what the spouse would eat - loves tuna, olives, pickles and jalepenos with crackers.  Easy to please for a quick fix meal.

melt and mash anchovies and garlic in olive oil, add 1/2 cup chicken broth. toss in 1/2 pound al dente spaghetti. sprinkle with italian bread crumbs browned in olive oil.
 
chicken broth heated with a chunk of ginger, add chopped frozen shrimp, spinach, rice noodles, cilantro. squeeze of lime.
 
one cup each spaghetti sauce, milk and chicken broth for tomato soup. grilled cheese.
 
tuna with mayo, celery and onions on toasted english muffin. top with cheese and broil.
 
cheese grits with soft poached eggs.

I agree about the Beanie Weenies.   However, I heat mine up in the microwave.

Quickie for me is just fried up american cheese omelet.
Quickie for the family is boiled cheese ravioli and a good quality jarred marinara.
I always have ravioli in the freezer.

Claracamille: I used to heat them, also, but finally tried "Sinatra-style" and liked it even better.  I don't know why!  I do add a shot of Worcestershire, though.
 
Tonight, I split a Hebrew National jumbo frank, grilled it in the Foreman, and had it on Wonder Bread with cheese & mustard on one slice, coleslaw on the other.
