was just wondering what folks do on nights when you are too tired or no time to cook & no tatsy leftovers are about but you still want something decent..one of our favorite short cut meals is a ham steak cooked right in a can of bush baked beans, some allens collard greens and maybe a few hot (canned) biscuits..it aint grandmas house but beats the golden arches!!

We keep some Louisiana Hot Links in the freezer for nights like that. Fry'em quick while nuking a can of SauerKraut and you're ready to go ! It ain't Bavaria, but it fills me up.

My favorite mid-week quick meal is probably penne pasta tossed with sauteed shrimp, garlic, onions, whatever else seems handy and appropriate (zucchini? artichoke hearts? peas?), then tossed with a cube of microwave-thawed pesto. If I have some sausage around I'll throw in a few slices. I add toasted pine nuts and grated parm at the end.

Canned vegetable or minestrone soup, add some leftover tomato sauce (always seem to have) and cook up some macaroni to add in (any peas/carrots/corn leftover throw them in too) Risotto - saute chopped onion, add rice til lightly browned, add a can of chicken broth, some corn, some peas, and water, let simmer for 30 min. stir in a little cheese if you like. Pizza, Martha White pak for $0.88, preheat oven to 500f leave door slightly open, and let dough rise on the stove top for 5 min, spread on pan, add toppings, bakes in about 10 min. Soft tacos are quick/easy when you keep some pre-cooked chicken breast around. Chicken Parmesean is also easy if you use frozen chicken patty and some canned tomato sauce and spaghetti.

A precooked kielbasa or smoked sausage on a bed of white rice in a casserole dish, heated in the oven. The sausage gives off enough juice to lightly flavor the rice. Brad

KFC...just kidding, 2 cans tomato soup, filled 3/4 to top with 1/2 & 1/2, slices of american cheese thrown in towards the end, toasted English muffins, Wine!

El Rey flour tortillas (local and tasty) spread with salsa, topped with cheese and onions and nuked until the cheese melts; roll like a burrito and chow down. It's not only our quickest dinner, it's one of my favorites.

Boneless chicken breasts browned in olive oil, tossed in with a box of parmesan angel hair Pasta-Roni or with Chicken Garlic Rice-A-Roni. Bagged salad on the side and dinner rolls. Yum.

Toasted Wonder Bread smeared with creamy peanut butter, Owl's Nest cheddar cheese spread, grape jelly and topped with cottage cheese. Strangely enough the only time this DIDN'T appeal to me was when I was pregnant.

Fried eggs (sunny side up) and crisp bacon topped with some good salsa and maybe some shredded cheddar served on toasted & buttered whole wheat bread. If I am extra ambitious I will fix up some grits also.

Lotsa great soundind stuff here! I have many questions and comments but... after reading this, Chewers Italian soup thread, and the Fried Beer thread, I am WAY to hungry to type much more. Hmm, what can I have? I have some pasta already cooked w/ butter, so maybe some sharp cheddar on that pasta... and topped w/ some Wolf Brand. Maybe? I can have that all nuked in about 5 min. But... shoot, I'm to hungry to decide what I want. Joe

Sliced Hebrew National Jumbo Franks mixed into some canned beans (baked beans, pork & beans, or chili beans), microwaved, and served with Texas Toast. Or... Bologna & cheese sliders. Sliced and grilled cracker-cut bologna topped with cheese, pickles, and mustard on slider buns. In fact, this is what I had tonight!

I always have Blue Runner creole style red beans in the pantry. Fry up a little andouille sausage (always in the freezer; nuke to thaw) and heat it with the beans. Sprinkle chopped green onions on top. Tear off chunks of French bread to scrape the bowl.

Leftover cooked spaghetti - In a skillet, heat a little butter and olive oli, add chopped garlic and heat for about 30 seconds, mix shaghetti in and toss with red pepper flakes, grated Parmesan or Pecorino Romano cheese until heated through. Grilled cheese, if I have bread Oatmeal or cream of wheat with tea (cold weather only)
