Your favorite Beef/Chicken/Pork soups?

Mine are as follows.
 
Beef - Pho 
 
Chicken - Oyako Udon (Peruvian Aguadito de Pollo is a close second)
 
Pork - Posole

    Beef  --  Pho Tai
     
    Chicken  --  Matzo ball
     
    Pork  --  Mabo Ramen done right which can't be found since Yokohama Ramen closed.  
     
    Otherwise, Posole with a squeeze of lime and fresh onions.
