Your favorite Moles

I just went to the Ole Mole event at tortilla flats and just loved all of the moles. My favorite mole was the Mole Negro (The famous black Oaxacan mole—dark, slightly sweet and highly complex. It includes the rare chilhuacle chile. Served with chicken.) What is all of your favorite moles??

    Same here, the Mole Negro. It's a symphony in the mouth. My favorite has chocolate and ground peanuts in it.

    Mole Poblano, deep dark red brown mole. Never cared for the other variations especially the green.

    The best I have ever had is at a place called Javier's in Laguna Beach, CA. It is a Mole Negro over chicken that is more complex than Sybil.

    The absolute most mouth watering mole I found outside of Mexico is Valerios Mexican at 1900 W. 15TH ST. In Panama City, Florida, in fact it's the only place surving home made food from scratch.

    Help educate me, please. What does one do with mole? Add it to a dish, or is it a dish by itself? Or a third possibility ?

    Mole is sauce. The most common use of it is Mole de Pollo, which is pieces of roast chicken heavily sauced with the mole. Pronounced MO-lay.

    Chicken Mole poblano from Botanas restaurant in Milwaukee (5th & National) - just had it last Friday! Delicious everytime!
