bacon questions

I have some questions about bacon.... 1.How long is it safe to keep in the fridge? 2.lately I have been buyiong Fltethchers from Costco- it comes in 2 two pound packs- though I l;ove bacon it takes a long time to go therough 2 pounds. Would it be bad to just take out half of one pack , then refreeze half of one of the packs?

You can freeze bacon. Another thing you can do is to repackage it into a couple of FoodSaver bags. I've kept bacon vacuum sealed that way in my refrigerator for six months without any problems at all.

keep it wrapped tightly in the fridge and it shoul last quite a while (like 3+ weeks after opening.as long as your fridge is cold I push mine to over a month, but then, your mileage may vary

You can also cook it, then freeze it and it will last a long time. I will bake a pound at a time and freeze what I don't eat. It thaws quick, and only needs a few seconds in the mike to sizzle like new. Can do the same with sausage links and patties too. Try baking the bacon on parchment paper, much less grease than on a rack or directly on the pan. I don't know where the grease goes, but I love the result, cleanup is easy. I like to do a pound with brown sugar or maple syrup on it, then leave in the fridge. It's a real treat to go in there and munch. Again, just a couple seconds in the mike. Great for parties, too.

I keep bacon tightly wrapped in the fridge for weeks, or freeze some of it. I cook bacon on a thick layer of paper towel on a microwave proof plate, covered with 1 layer of towel to prevent splattering. I cook it 1 minute per slice (Varies slightly with thickness of Bacon and Wattage of microwave) Easy Clean-up!

Can't waste that! Bacon fat rules; as you know. :)

I only use thick sliced bacon. I cut off about a 2 inch chunk through all the bacon strips & freeze it, this chunk I use when I need crispy bacon bits for salads, soups, etc. Then the shortened slices fit better in my skillet. I always fry my bacon in a skillet so I can collect the bacon grease which I use for frying cabbage, southern style green beans, etc. I don't know what I would without my bacon grease jar in the refrig. Most of the time, I have no problem using bacon up before it goes bad, but if I have any question, I do the smell test- you will know when the bacon is too far gone to use.

As long as you keep it covered it should last a long time, up to a year or more....after a long period give it the sniff test, rancid grease is nose obvious!

Mike S - Why not scrape off the mold and go with it? I think that way, it can last a year or two in the refrigerator.... I just saw on the website for a restaurant....."BBLT"...Double bacon lettuce and tomato..Pretty neat. I love bacon, but don't enjoy the clean up. Yet, I hate the pre-cooked stuff. It just doesn't taste right to me.
