bagels...

Bagels are taking off. I was reading an article that stated there are only 6000 bagel shops. However the article stated there are room for 20000 in the us...
 
I think its a perfect base for all kinds of sweet and savory additions???
 
My new mission is to bring good bagels to the masses...

    Correct.../when I was in Kansas,they didn't even know what a bagel was...real bagels,New York style and boiled could be ready to take on the rest of the country....why not...let the country know what we've known for ages here in the Northeast....

    New York Bagels, I can only dream about them. We are going out Sunday night to a Pizza restaurant named New York Richies, I can only pray that it comes close........................

    What was the date of that article? The Bagel high growth craze has pretty much come & gone. The only limited growth in the Bagel Catagory is as a result of the introduction of new products - Gluten Free, smaller/thinner bagels, bagel twists, etc

    In Amherst Massachusetts, The Black Sheep Deli has a superb bakery ... breads, tarts, the works.  They IMPORT H&H NYC bagels and serve them.  I know they come forzen and are finished in-house ... perhaps that is why I usually break from "not toasted" to "very, very lightly toasted" when I order there.
     
    Kudos to a bakery that "gets it."
     
    They have excellent coffee ... A must stop when there in the morning.
     
    I'm a big fan of restaurants in the Pioneer Valley ... not to hijack, but as I write this, I'm reminded that The Amherst Brewery, does great brewing -- yet they have Guinness.  They told me they simply love great beer and Guinness can't be beat.  Again, Kudos.

    Well, while you're at it, try bringing a proper topping as well.  Those various mixtures of cream cheese with who knows what (often, the trimmings from salmon) sold in chain bagel shops are an abomination.  Lox means the real thing--actual pieces of good lightly smoked salmon-- along with plenty of good quality cream cheese, some Bermuda onion, maybe some capers or tomato

    I heard Panera's Breads Chain is offering Gingerbread Bagels!
    I live in NYC and (luckily) we have no Panera's. Guess I have to settle for a real New York bagel!

    I heard Panera's Breads Chain is offering Gingerbread Bagels!
    I live in NYC and (luckily) we have no Panera's. Guess I have to settle for a real New York bagel!


    That would cause me to stop dropping into Panera for coffee.

    The masses already know about what they think are bagels. And using a real bagel as a base for anything other than cream cheese and cold smoked salmon, and perhaps onion and tomato is blasphemy subject, one can only hope, to a lightnig strike from an angry God.

    By the way, if you happen to be craving a bagel with lox in San Francisco, one of the best places to get one is, surprisingly, the cafeteria in the state Public Utilities Commission building at Van Ness and MacAllister.  The place is run by a private contractor and called "Mocha's Cafe" and it has quite good food, but one of the standouts is the bagel with lox.

    I have a Panera's on the end of my block.  I went once. Well really it was 3 trips all within 20 minutes.
     
    They had 3 attempts of getting my to-go order right.
     
    All three attempts failed.
     
    Shouldn't a bakery know the difference between rolls and apples?

    I'm not a big fan of their regular bagels. Since I have access to some really good bagels in my area I rarely get bagels there. I have gotten their asiago bagel (very good), Cinnamon crunch bagel and the cheddar jalopeno bage.  My favorite thing to get there is there is their stone milled rye bread. It's great for sandwiches, toast or just sliced with some really good butter on it.

    I have not had a real bagel in years....small town, all you can get is the packaged crap or what the supermarket bakery passes off as a bagel, similar to crusty wonder bread in round form.
    We do have a little bakery that makes a great caramelized onion and gruyere cheese focaccia...but sadly, no bagels.

    Bagels nowadays aren't like they were when I was growing up in the 1950's in northern New Jersey.  They were made by hand and something about the chemistry of dough kneaded by hand makes it slightly sweeter in a way a machine just doesn't.  Does anyone remember the "bagel baker" (the only name he was ever known by) in Paterson, NJ?  He would open up late on Saturday night and cars would pull into this dark street, and almost always it was only men who got out and waited in line at the door to the kitchen to buy the hot bagels to bring back to the family waiting in the car.  The bagel baker would ask how many children in the car, and would give, free, these mini bagels.  I can still remember the taste of those bagels and I think I would weep if I ever got to taste something like them again.  I've resigned myself to accepting pretty good bagels now, like House of Bagels in San Francisco, but nothing on a par with those back then.  A theory is that the generation of Jews that came from Europe who brought their recipes and methods for making bagels, wanted a better life for their children and didn't encourage them to learn the business.  Understandable, but what a loss!

    In Knoxville, TN, we have no access to really good bagels like we got in NYC.  I doubt that we ever will.
     
    We got bagel places here and they sell 59 varieties of bagels but they taste like something that you would get at Kroger's.
     
    Nobody does bagels like the pros in NYC.

    We got bagel places here and they sell 59 varieties of bagels but they taste like something that you would get at Kroger's.

    Nobody does bagels like the pros in NYC.

    I totally agree.  I would rather have one flavor fresh and many that are stale.  It is the same way in Knoxville.  You go to many of them and they will have many varities as pictured above.  You taste them and they are all the same.

    Fresh baked several times a day.. my favorites are the bialys and the raisin bagels..you guys do not know what you are missing.  Folks buy them by the dozens.

    I repeat, you are probably not rolling by hand 30 varieties of bagels...enough at a time to keep thpse 30 bins stocked with fresh, warm bagels..Several times a day?????The bagel places I know,they're usually still warm when I get a bag...or at worst, an hour or so old!!!! I've had to wait for mine often to come out of the oven...and they make only about 8 varieties!

    However they are manufactured they taste just like NYC bagels...the fast sellers are baked as often as needed..
