    There's a food truck near me called Hunger Construction. They hollow out a baked potato and stuff it with eggs, bacon, sausage, you name it. INCREDIBLE.

    The potato thing sounds like an easy add-on to food truck menu. The potatoes could be pre-roasted and kept warm easily. The toppings are things that easy to cook, or that you can just keep in a condiment bar. Cool idea.

    The fact that most all the Fast Food Chains have jumped into the Breakfast segment is proof of the available Market potential.
    I seem to have noticed more Breakfast/Lunch places opening now than I have previously seen.

    Yes, but with all of those we will have to do something a little unique to stand out. Here in Denver, the breakfast burrito is very popular. Many of the restaurants are semi-open for that (it's takeout only, and you're limited to different types of breakfast burritos). For a brick and mortar, it seems like a no brainer. They make some money when they would be there anyway prepping for lunch. By having such a limited, easy to cook menu, they can put one of the dishwashers/buss-boys on that while the chef and sous-chef do the actual prep work.
