I have to either order a new cutting board or sand that one down, i don't like it, it's used equipment, not new... so don't go there LOL

Damn, that's a huge menu! Are you making anything from scratch? If so, I think you'll want to cut it down a bit. Cold storage may be a problem too?

lay that cutting board on an old white beach towel that you can fold over both sides. pour bleach over towel to wet it down well. leave overnight. youll be amazed in the morn. truck looks amazing and a very professional look. luv the sides. what did that cost?

truck cost me about $6k w/ taxes and everything else ran me from start to finish about 20k including paint job, which cost me under $1000. Menu should be ok. Plenty of cold storage available, next to prep stand is countertop fridge 48" everything comes from sysco, except chicken & tuna salad which I make . Peas & hot dogs in winter !!! lol
