I don't think I've talked about this yet... I think this might be useful for many of you. I've been frustrated trying to roast peppers over an open flame on the stove. I was using the commercial tongs you can get at restaurant supply houses. I'm only roasting one serrano at a time, my girlfriend hates them. But, they are really easy to drop into the stove top. A real pain to retrieve them. So, I was stumbling through the Home Depot a while ago, and the light went on above my pointy head when I spied those things, I don't know what they are called, that you place in a tray full of paint, it's the thing that you push the roller against when you're painting a wall. They had three sizes, I picked the middle one. Cost? $1.46 It has four sort of legs, and they are super easy to adjust, so the thing sits level above the stove's burner. Works like magic. I think it would even work on an electric range. I'd like to hear from others who try it.
