Again it would depend on the type of event. The only food barriers you face is the time of year and is the even set up for standing with food or is there seating locations. Time of year for temperature. You're not going to sell a lot of heavy loaded potatoes when it is 95 in the summer when people are looking for light and cool. Grilled corn and corn dogs are more pleasing at all times and I wouldn't worry about them. Again for the potato, it's a little harder to walk around with. Doesn't sound like a good idea for a walk around thing, but if people have the option of sitting and it's less of a walk around thing - like a music fest, you may be ok.

When I lived in FL I had a grill corn on the bob on a stick. It was grilled and sprinkled with chili powder mix(I can not remember the other spices) and white cheese with fresh cilantro mixed in. It was very good but the cheese was somewhat messy. The menu called it CCC (Cuban Corn on the Cob). Its been a while so I can not remember what other flavors where there, but I am sure it would not be hard to find a simialar recipe. I would imagine using Silver Queen it would very very good. Corn dogs are universal. Not sure how potatos would fly though.
