corned beef recipes for the crockpot

Hi what are some of your recipes for corned beef in a crockpot?  I want to put in onion, cabbage & carrots, but what liquid do you cover it with?  Water??

    We have crock pot corned beef several times during a typical winter and water has always worked, but we generally don't add any vegetables.

    I used a crock pot in SoCal when it was 110 outside and didn't want boiling corned beef to make the house any hotter.  Cover it with water in the crock pot and cook about 6 hours or until tender.  I throw in a little pickling spice, black peppercorns and a few bay leaves. 
    I added vegetables when the meat was done and cooked another hour.

    Lisa, if I want brisket, braised short ribs or pot roast, it's cooked outside on the grill using one burner, with the pot on the unlit side. I agree with Lisa on how to cook. wedge the cabbage, keep the carrots and onions in large chunks. Make sure all the vegetables are cut the same size so they cook evenly...............

    Bill, I would've done that too in SoCal but all we had was a Weber grill.  Not real practical for long-cooking items.  I've never been a fan of crock pots but it did come in handy down there when we got sick of chops, steaks and other stuff on the grill.
    Oh great.  I just got a text from MH saying he wants me to make corned beef..........or chicken pot pie.  Sheesh.

    Lisa, After I saw this post, I was thinking Corned beef too. Then on another post,that outlaw Chewingthefat, brough up Corned beef. I think it's in the cards.........Oct is nextweek, Mollie went to a Halloween party last night. I'll send you a picture in E-mail, she went as a peacock, painted face and all..............I could feel the chill in the air, it's a great time for root vegetables...........My wife is asking for Chicken noodle soup again..........GGEEZZZZZZZ do these people ever stop...............

    Corned Beef Brisket Recipe: 

    In a Dutch oven place brisket and cover with water and bring to a boil. When boil just starts turn off heat and skim off foam. 

    Then add 1 1/2 cup dark brown sugar 
    10 cloves garlic slightly crushed 
    1 tablespoon whole peppercorns 
    1 teaspoon mustard seed 
    4 cloves 
    3 bay leaves 


    Cover pot with aluminum foil and put lid on top of foil. 
    Place in preheated oven at 350 for 2 1/2 hours. 
    Add vegatables (potatoes,carrots, onion...etc) and cabbage and cook for additional 1/2 hour to 45 minutes. 

    I have cooked a lot of briskets, and given this method to many. All of which say it is the best way. Smells almost as good as it tastes.

    You can adjust this for a Crock Pot i am sure.

    I've cooked many a corned beef, in water, in my crockpot and learned, over the years to cook the vegetables separately. I tend to do this even if I'm cooking the corned beef in my Dutch oven. I usually use a ladle or two of the cooking liquid to cook the carrots and potatoes and I stir fry the cabbage in a skillet with a spoonful of the cooking liquid.

    As much as I like stir-fry or sautéed cabbage, I like mine in wedges, boiled along with the carrots, potatoes, whole boiling onions and yes, rutabaga.

    I usually do mine in a Dutch oven on the stove, but I've also done it in the crock pot on low for 8-10 hours (put everything in at once instead of staggered) and won. Mine is a combination corned beef/New England boiled dinner.
     
    5 pound corned beef brisket
    4 medium yellow onions, quartered
    4 cups water
    8 garlic cloves
    4 large red potatoes, quartered
    4 large turnips, peeled and quartered
    8 carrots, scrubbed and halved
    1 head cabbage, cut in 8 wedges
    1 teaspoon salt
    1 teaspoon black pepper
     
    Rinse the corned beef brisket and place it in a large pot. If you feel like it, add the spice packet that comes with it.
    Add the onions and garlic to the pot, then pour in water to almost cover the brisket; cover and bring almost to a boil over medium heat, then reduce heat to low and simmer three hours. Leave covered.
    Add the potatoes, turnips and carrots to the pot; bring back up to almost boiling, reduce heat and simmer another hour. Leave covered.
    Add the cabbage to the pot and sprinkle with salt and pepper (if it doesn't look like it'll fit, just put the lid back on the pot until it cooks down some. Simmer another hour or so, until the cabbage is tender.

    I've always cooked corned beef by itself in the crockpot, added the seasoning packet that some come with, and enough water to barely cover.  If you cook the vegetables at the same time as the meat I would think they'd be mush by the time the corned beef was done, also too salty.
     
    I just got a tip the other day I want to try, but it's for cooking on top of the stove.  Add 2 TBS of Zatarain's concentrated liquid shrimp and crab boil to the the pot.  It's not supposed to come out spicy or give it a crab boil taste, just a little something extra.  I don't know the proportions for a crockpot though, whether to use the same amount, guess I'd experiment with a couple of teaspoons.  I figure being in Florida, you might have easier access to the crab boil.

    I always put a medium sized onion, cut in half, and a couple of cloves of garlic into the slow cooker.

    I always make my corned beef in the oven. You can never get a "roasted" flavor in a crockpot. I use the yummy "juice"'from the roasted corned beef to cook the vegetables on the stove top.

    I have always used beer as the liquid for my corned beef. Not a heavy dark beer - a lighter beer. Adds a certain flavor that layers in. I cook veggies (especially potatoes) separately.

    I put large chunks of onion in the crockpot, put in the corned beef, and all liquid from the bag.  Rub lightly with light brown sugar, add the pickling spice packet and cover with Guiness beer (2-3 bottles).  Cook for 10 hours on low.
