Hi all I have a pound of jumbo lump crabmeat and would love some of your ideas...I am weary of making crab cakes....

    I love this one; I got it out of a cookbook of old railroad dining car recipes.  It's my favorite because it doesn't use a ton of mayonnaise.
     
    Crabmeat Salad Olympia Hiawatha
     
    1 pound lump crabmeat, cooked
    1 chopped rib of celery
    1 green onion, finely chopped
    about 1/8 teaspoon each of fresh chervil and parsley, finely chopped
    1/8 teaspoon curry powder
    1 teaspoon tarragon vinegar
    about 4 tablespoons mayonnaise
     
    Gently mix crab, celery, green onion, chervil and parsley.  Stir vinegar and curry powder into mayonnaise.  Pour over crab mixture and toss gently.
     
    Place crab mixture on lettuce leaves; decorate with pitted black olives and/or sour pickle slices.
     
    Can also be used as a spread for canapes.

        There's a CIA recipe for catfish and crabmeat:

        Saute some onion in butter, add heavy cream and stir till slightly thickened, salt and pepper to taste,  add crab meat, pile on the catfish filet, sprinkle generously with cornbread crumbs, place in buttered baking dish, add enough white wine and water to come halfway up the filet (keep the cornbread dry)  bake in 350 oven for about 15 minutes.

        Make a sauce of julliened ham and cream by gently heating, season with salt and pepper, add the liquid from the baking dish, add a shot of sherry, pour sauce around the filet and serve with rice on side.

                    I'll giveyou the ingredients for a cream of crab soup
                    Green or any color pepper seeded and chopped
                    a stalk of celery chopped 
                    a carrot chopped
                    a shallot
                    Capers
                    crisp bacon
                    Chicken base
                    Lobster base
                    Old Bay
                    Heavy Cream
                    Cream of Sherry
                    Puree the vegitables, add the Cream, Old Bay, Chicken and Lobster base, bring to a high simmer, don't boil, add Cream of Sherry to taste
                    Add the Crab but just fold it in, along with the bacon
                    Voila! A terrific Cream of Crab soup

                            I feel like Bubba in the Forest Gump movie....  

                            crabmeat au gratin is one of my favorites, then there's crabmeat Veronica, hot sherried crab dip, crabmeat stuffed mushrooms, West Indies salad, crabmeat St. Jacques, crabmeat Imperial (mentioned and I second) , deviled crab.

                            Anything leftover, make a cocktail with chopped lettuce, celery,(hearts better) crabmeat and a cocktail sauce.
