We went to a friend's house in Ormond by the Sea for crabstuffed tilapia.
 
Fresh tilapia, crab meat, celery, onions, carrots, olive oil, garlic-saute, dry white wine, seasoned bread crumbs, fire roasted pepper, cayanne, lemon, basil, thyme, s&p, and eggs

guest chef's husband-Stanley, if he had one of sk bob's steel plates, you would have seen sparks flying (and that's the way he always eats!!!!)

 
A very good meal with very good company on a beautiful 75 degree evening in Ormond Beach, FL.  I'm glad that she made it, because that's too much preparation for me.  (I like it fast and easy).

          I can't help wondering why, with the Atlantic on one coast and the Gulf on the other, someone would bother with tilapia.

            My husband was the victim of a tilapia craze in the 90s. My local butcher pushed and I made it every week.Finally, not really knowing the name, he said"quit buying that tippy tappy or whatever it is". However, that recipe sounds great...

                you lived here Michael but wussed out and moved to nowhere Ohio.
                why do people that live in New England eat "scrod" ? what the hell is that?
                if I'm going to stuff a fish, it wouldn't be an expensive one because you can't taste the fish with all the other ingredients anyway.

                  Actually, when I lived there I ran a charter fishing boat. And when I left I went back to Connecticut. From there to West Virginia and then to the Virgin Islands. After that it was back to West Virginia and then to Ohio.

                    I used to live in Connecticut Michael & wouldn't move back there for love, money or beer.
                    I know what scrod is, its the white fish of the day.
                    I'm not a food snob like some people think they are, but I know what I like.

                      I dont think it fair to say that it would be a waste to use an expensive or flavorful fish and stuff it or serve it with a nice sauce.  Has anyone ever had sole  margueray?  We would use the best sole we could find(usually dover because of the size of the fillets).  Even with the oysters and cream sauce the sweet falvor of the fish shone thru.  It heightened rather than hid the quality of the fish.  As for a crab stuffing, if you dont make it heavy it can be a very delicate dish.

                            Michael - The local fish wholesale/retailer here is Hull's in Ormond Beach.  They get boaters' catches every day including Sundays.  It's kind of funny because almost every restaurant that serves fish gets it from either Hull's or one or two other suppliers that come from Orlando.  Hull's is about 3 miles from the ocean.

                            Anyway, if you go there to purchase fresh fish as I do for my wife, they have it all cleaned and in filets.  They sell dolphin, snapper, mahi mahi and all of that is at least $12 a pound and up. 

                            Some of their offereings are as high as $15 to $19 a pound despite the fact that we are literally right at the Atlantic Ocean!  Proximity in this case does not yield what I'd call reasonable pricing for fresh fish here in Ormond Beach. 

                            If you choose to go to Publix for fresh fish, the same situation exists.  I refuse to pay that kind of money and so I get salmon at $6.99 a pound or we make shrimp, etc.

                            It's very possible that SK Bob's host did not want to spend $15 a pound for fresh fish that night.  It could have been the principle of the thing or the reality that it was not in their budget.   

                            Jsut wanted to let you know we rarely get fresh fish here at reasonable prices....for Florida.  Now, in comparison to what you may pay up north, maybe you do feel $15 to $17 a pound for fresh fish is cheap?

                              I had to laugh at myself. I read the whole thread, but I had to scroll back up to the top when I realized that the dinner was what was on the plate. I thought that picture was just the stuffing set-up and not a actual meal.
                              It's funny about my perceptions, I did not know that was the dinner.  Most photos are composed and have the food within the rim, that is what fooled me...

                                Aside from Copper River salmon fresh fish here is  considerably less expensive. And by the way, mahi mahi is the Hawaiian name for dolphin, or dorado, which  is the Spanish name for dolphin.

                                    Michael - It's mahi mahi, tuna, red snapper, and GROUPER.  Yes, dolphin and mahi mahi are the same...I meant to say grouper.  Anyway, that's what we have here and like I said, they are all very expensive. 

                                    I have no idea why they would be more here than where you live... Sometimes we get scrod and it's usually around $10 a lb.  Hey, isn't everything called scrod up your way?  I mean cod fish? Isn't that also called scrod? 

                                    Once in a while we will also get flounder at the same price.  The one I like is lemon sole but we rarely ever see that down here...
