I do not measure, so these are approximations. We usually serve this on special occasions as it is sooo rich. 

Serves 6-8 as a side dish or more

6 large potatoes
water
4 oz cream cheese-regular or reduced fat
4 tablespoons butter
whole milk
two finely chopped scallions
a bit of mace to taste
white pepper to your taste
salt to your taste
some shredded sharp cheddar or Swiss cheese 

Cook whole potatoes, then peel. Mash with butter, milk and cream cheese, mace and pepper. I like it with bits of lumps, but you can make it smooth. Do not make it gummy or pasty.

Add to a buttered casserole dish, top with cheddar, and bake for until cheese is golden brown. I had the over at 350 to 375 degrees.
