drawing a blank can you help?

I'm drawing a blank on the term for a food truck or trailer that doesn't need a commissary.

there really isn't a term, unless you are B/M establishment, then you gonna need a commissary. I own a food truck, food trailer, & a hot dog cart. All 3 technically need a commissary. My food truck can bypass it bc we don't re-serve the next day & our sinks are big enough to wash our biggest pan.  I would just ask your H/D and not fart around on the forum relaying on someone to give you the answer that only your H/D would be able to give you.  GL !

In Illinois it's also full service and we are no different than a B&M unit.

here no matter what you have you must use a commisary...cause...............even tho you can wash your own pans, make your own stuff, or what ever....you still need to dump your gray water....and not on the street....in your yard, down your own septic, not a man hole....at the car wash..etc.etc. has to have a grease trap regular insp.
