egg salad

Hi again....I would like to hear your favorite egg salad recipes. My Dad used to like egg and olive (spanish stuffed)salad.

Mine is quite basic.
Finely diced celery and onion.
Sweet relish, pepper, and miracle whip.

I just use eggs, chopped onions, pepper, a touch of Gulden's mustard and some mayonnaise.It works for me.

1 dozen eggs, hard boiled
1 pound sliced bacon, cooked crisp

Peel eggs, push through 1/4th " square grate into bowl. Cut up bacon with kitcken shears to approx. ===>> (no larger than 3/8th " pieces). Mix in real mayo until mixture is coated thoroughly. Not too wet; not too dry, etc. Add Duke's Famous Sauce until desired consistency is met (you shouldn't need a lot). Add 3-4 twists of freshly ground black pepper & mix well. Taste. Add a bit more mayo if needed. Cover & marinate overnight.

Boy, these all sound good! I usually use ehhs, MiracleWhip, a bit of mustard and S&P.

I like my egg salad very finely chopped, almost deviled egg stuffing like, I eitehr place the eggs in a food processor/blender or mash and mash the eggs and miricle whip with a fork. Into that goes, a sprinkle of salt, a bit of paprika, a dash of both worchesire and hot sauce and some chopped onion or scallion is the basic mix. Add in some bacon, shrimp or chopped sundried oil packed tomatos etc etc

When we first got married my DOH decided to short cut the making and added EVERYTHING to the blender... the result?.... an egg sauce that required 3 dozen eggs to make usable on sandwichs!

I agree with your Dad, Blue. Egg-olive (finely chopped boiled eggs, chopped Spanish olives, salt, fresh ground pepper, and good mayonaise)makes a terrific sandwhich on soft white bread.

I'm still looking for the "What's Up Tiger Lily?" recipe.

-Hardboil a Dozen eggs.

-Chop and place into a bowl.

-Add 2 tablespoons of real mayonaisse.

-Mix well. Carefully as not to break up the eggs.

-Add a tablespoon of lemonjuice.

-Add salt and pepper to taste.

-Add parsley. I prefer alot but to each his own :)


Mix it again let and then place it in the fridge till you want to eat and boom amazing egg salad.

finely chopped onion, celery, salt & pepper, and a few drops of salad vinegar - taste - if a little tart, add a tad sugar. Most of the time I use Steen's cane vinegar which eliminates the need for any additional sugar.

forgot to mention - mayo of course, but not too soupy.

I like it plain, with Hellmans salt and pepper.

I've had it with sauteed onions and mayo, something different and a bit of horseradish. Very good.

Chopped Hard Boiled eggs of course, 3-6-12 whatever you need.
Mayo
Finely chopped Celery
Finely grated Vidalia Onion
AND THE KICKER
Gambino's, (Since 1949) New Orleans Italian Olive Salad!
Salt & Pepper

Since I rarely measure anything, just wing the quantities of the ingredients to your taste.

I found the Gambinos Olive Salad in one of Kroger's subsidiaries out here in AZ - Frys Supermarkets. You should be able to get it at any Krogers or Kroger owned chain.
The Olive Salad is the real deal, like what you would find on a Central Grocery Muffalatta.

I'm reviving an old thread. Let's hear about your favorite Egg Salad Recipe.

I won a cooking contest many years ago by stirring in a can of deviled chicken and a little Madras Curry Powder... along with mayo and yellow mustard.

  I like mine with Hellman's Mayo, finely diced onion and celery, sweet pickle relish, fresh ground sea salt and black pepper, with just a dash of Tabasco sauce for kick.
