Got this recipe from a friend at work. She made them, they were awesome. here's the simple recipe. It's hard to believe how good these are, but the batch she brough into the office, was gone before lunch. some tips. Don't let the crackers over cook. Don't cut into pieces until they are back to room temperature after it comes out of the fridge. MOCK HEATH BARS 1 box salted saltine crackers1/2 cup sugar 2 sticks butter16 oz. milk chocolate chips Preheat oven to 350 degrees. Line cookie sheet with aluminum foil. Cover entire sheet with single layer of crackers. (Crackers should be touching.) Melt 2 sticks butter with 1/2 cup sugar on stove. Pour/brush melted butter/sugar mixture over the crackers, covering evenly. Bake for 10 to 12 minutes. Remove, and pour chocolate chips on top. Let the chips melt for a few minutes. (Do not put back in oven.) Spread the chips evenly over top of crackers like icing. Refrigerate long enough for the chocolate to harden. Remove from refrigerator. Cut into squares after chocolate reaches room temperature.

This is an oldie but goodie. I've been making it all season for parties, etc. My version is slightly different (1 c brown sugar/2 sticks butter) and I sprinkle holiday-type sprinkles over the top. I think it tastes better chilled than at room temp. In fact, if the local traffic dissipates (!) I plan to buy the ingredients so that I can make some for Christmas Day. We'll see...it's a jungle out there right now!!
