funnel cake fryer oil started to smoke Tue, 04/1/08 10:09 PM (permalink)
I just did my second event(1st cooking funnel cakes). The oil started to smoke late in the day and I added some more oil and it helped but the smoking came back.

I used canola oil and made approx. 150 cakes.

I thought the oil would last longer than that.

Any suggestions on what I did wrong?

    Sounds like the oil simply got too hot.

    Also, once oil smokes, it's toast. Don't reuse it after it smokes.

      How hot is too hot for canola.

        Once that oil breaks down..dump it ASAP..Probably the biggest part of the food cost of those funnel cakes is the oil...You should get some informationfrom others in the business how they extend tehir oil, if they even can. I'd love to here their trade secrets.

          Canola oil smoke point is 395 deg F to 415 deg F.

          Soybean Oil and sunflower oil has a high heat point (465 deg F & 475 deg F) and may last longer for you.

            You shouldn't use low sulfur diesel.
