funnel cake fryer oil started to smoke

I just did my second event(1st cooking funnel cakes). The oil started to smoke late in the day and I added some more oil and it helped but the smoking came back. I used canola oil and made approx. 150 cakes. I thought the oil would last longer than that. Any suggestions on what I did wrong? Thanks

Sounds like the oil simply got too hot. Also, once oil smokes, it's toast. Don't reuse it after it smokes.

Once that oil breaks down..dump it ASAP..Probably the biggest part of the food cost of those funnel cakes is the oil...You should get some informationfrom others in the business how they extend tehir oil, if they even can. I'd love to here their trade secrets.

You shouldn't use low sulfur diesel.
