If you would like to try Indian flavors, I would suggest tandoori chicken or a facsimile baked in the oven.
If you use non-fat yoghurt and skinless drumsticks, you can have a very flavorful dish accompanied by a crisp lettuce, cucumber, tomato salad dressed with lime or lemon juice. Alternatively, you can make a salad with non-fat yoghurt, grated cucumber, zucchini & carrot & chopped mint or dill.
Make a side dish of bulgur. Soak in boiling water for 10-20 min & drain. Add chopped tomatoes, scallions, quite a bit of cooked [or canned ]chickpeas, lentils, mint, parsley, chopped olives of different types, some olive oil, lemon juice, grated lemon rind. Mix and let sit for 20 min.
Chicken Breast: pound lightly, cut each half into 3-4 pieces and sprinkle with your favorite seasonings or rubs e.g. crushed dried herbs like oregano & black pepper. Roll in flour, then in beaten egg, then in lightly crushed corn flak. Spread on to non-stick sheet pans sprayed with oil or lightly smeared with your fingers. Do not let them touch. Bake in preheated 400F until just done.Test one with an EXCELLENT meat thermometer, IMPORTANT, until insides read 160-165F before eating.You can remove from oven before this PROVIDED you allow time to rest AND ensure SAFE internal temps before eating.
