hi everyone(Tikenis Kala fellow Greeks),

Im new to these forums and from what i read it looks like an awesome website. I just finished College and to make some extra cash i was thinking about working at seaside NJ operating a doner kebab stand this summer. Everything is still in its prelimenary stages, but me and my partner are very serious about starting up. I just wanted to know what are some things we need to have in order to operate this stand(like permits or insurance, health stuff... im a noob). We know how to make kebab really good so thats not a problem.
Also what do you guys think about doner kebab, i know its not as big in the US as it is in Europe. Would you guys opt a doner sandwich over a hotdog or pizza?

    Obviously, you're going to be competing with stands selling gyros.

      Check with your local health department for rules, regulations, licenses, and permits. While hot dogs and pizza have been linchpin of the Chicago food industry for years, they're being nudged by Italian beef, gyros, hamburgers, nachos, bbq, and brats. Here's a excellent resource for authentic Greek "Gyrokones," which originated in Chicago in 1975. A doner kebab is a rotating roasted meat aka a gyro. www.kronosproducts.com
