    Sorry Giggs,
I'm not sure how to fix that problem either. I have actually tried every way I could to get more flame...often turning it more yellow that blue. It gets dirty but if I could I would have flames that sit 3 inches over the top of the grill. (okay I do like the option of turning them down of course).
I just end up cleaning my pans pretty darn frequently. Maybe it's because we use propane and not natural gas? I really don't know.

Your burners need to be properly adusted or replaced by a qualified propane technician. The proper flame is all blue.

Question? Do you use a water pAn or do you use the pans over the flame?
Mine has owner installed water pans. 6" deep, I fill with water 2 or 3inchs deep, then I float my 4" pans for product in water pan. One of these pans should be a plastic one, to see if you need more water. I clean the floating pans every day. My water pan gets cleaned every couple of days. I remove it. To me this is a sacrificial pan (water PAn) will last about 2 to 3 yrs. It works for me and maby not for you. CBB in PA

Considering it's a cart, I'm pretty sure it was set up for propane and not natural gas.. Thus rules the jets out. Sounds like your having a gas/air mixture problem. Somewhere in the off topic section, I posted the workings of these burners, along with troubleshooting and repairing.
Here's a link to the basics that should help you figure out and fix the problem: http://www.servicematters.com/tech_ref/JA/am3.pdf

giggs.. First off, the information I shared with you is for informational use only. You need to have a 'handyman' and 'technical' knowledge base to mess with this stuff. To me, it's simple... I can look at it and figure it out in a heartbeat. I'm guessing a spiderweb in the venturi. Very common problem. But if you have no clue on what your doing, leave it to a professional and spend the extra buck. When your messing with propane, it's a very heavy gas.. And when I say that, you screw something up, the gas will drift down to the lowest point of your cart before rising up again. When it finally rises to to the flame, you have a stick or two of dynamite going off there.. SAFETY FIRST!

As for replacing the cart, WHY? If the ol' girl has done ya good, minus the burner problem, why replace it? Carts are not cheap to say the least. But if you want my suggestion, I say Custom Mobile Systems. Hands down on that cart(s).

Did you have the regulator checked for the proper pressure? I had that problem once and could not get a blue flame and found out the regulator was not allowing enough pressure.

I have the same problem and with the same manufacturer. I just thought that's how it was supposed to be. My husband is sick of the ash. I have been trying to make sure to only blue flame it, but my middle burner gets more flame than the other too.

Let me know if you have a solution. I may call all american myself to see what to do.

Sounds like could be a combination of 1 to 3 problems:
                                  1. Regulator
                                  2. Clogged Orfice
                                  3. Poor Air to Gas Ratio.
Take it to an authorized propane supplier for a tuneup
