For the collard greens @ 1 1/2 cups per serving you would need about 23 - 24 quarts (6 gal) of cooked greens. So 2 hotel pans (4 inch deep) a little less than full (safe hot handling) are about 12 quarts each (14 quarts level full).
Now you need about 40 to 45 lbs of cleaned and cut greens ready to cook. Buy at least 50lb (may be more) to allows for cutting tough stems out.I would buy a couple of bunches and re-weigh after trimming to check weight loss. ... Greens are cheap, so don't run out. I weighed some a few days ago, 1 bunch is about 3 1/2 lbs in my area stores. OR, you can cheat and buy institutional canned collards.

40 -45 lbs greens (clean)
4 gal water
8lb salt fatback or smoked hocks
3 cups of bacon grease if you have it
