how much ribs and collard greens and black eyed peas for 50-60 people?

    If Baby Backs, 25 racks for 60, a full pan and a half pan each, of the Collards and Black Eyed Peas
    Edit: the 1&1/2 pans, I meant finished product! 60 people will not each eat a half rack of Baby Backs, unless they are scrawny as all get out, the Ribs that is!

    For the collard greens @ 1 1/2 cups per serving you would need about 23 - 24 quarts (6 gal) of cooked greens. So 2 hotel pans (4 inch deep) a little less than full (safe hot handling) are about 12 quarts each (14 quarts level full).
     
    Now you need about 40 to 45 lbs of cleaned and cut greens ready to cook.  Buy at least 50lb (may be more) to allows for cutting tough stems out.I would buy a couple of bunches and re-weigh after trimming to check weight loss.   ... Greens are cheap, so don't run out.  I weighed some a few days ago, 1 bunch is about 3 1/2 lbs in my area stores.   OR, you can cheat and buy institutional canned collards.
     
    Fresh Cooked Collards
    40 -45 lbs greens (clean)
    4 gal water
    8lb salt fatback or smoked hocks
    3 cups of bacon grease if you have it
    salt & pepper

    No cheating on collards!  Fresh only!  Peas cheapest when prepared from dry; seasoned similar to above.  And bacon grease is your friend.  Don't forget the cornbread!

    I'da said 30 racks of babybacks, half a rack per, but 1) I don't do this professionally, and 2) I wouldn't mind 5 extra racks of babybacks in the fridge! (What is waste for a restaurant is gold to a home kitchen!)

    From the OP's addie, I think this is a charity fund raiser.   Either this will be fixed plate servings (clam-shell to-go) or eat-in service.  Don't want a lot of left-overs.
