Big Jake: I have a couple of suggestions:

1: A spell check might help me totally understand your thoughts
2: Eat them while they are hot
3: Add bell peppers and jalapeno peppers

After you shred your spuds, soak them in COLD water for a few minutes, drain well then soak them in cold water for a couple more minutes again. Squeeze out the water thourghly before frying. This helps remove the starch and makes them much better!

Jake - I would just stick with the onions, potatoes, salt and pepper and let the customers add any Tabasco etc. The beauty of the hash brown is in the simplicity.

Cook the frozen hashbrowns on a griddle til one side is brown, and the flip.
