how to work with a wine steward?

I am a wine steward, I have been working with wine for 2 years and am about to start my sommelier training class’. I help people pick and by wine I have never worked in a restaurant other then hosting lol! Turns out one of the gentlemen I have been helping for about 6 months pick his wine asked me if I would be interested in picking the wine for his soon to open restaurant. He would like me to meet his team this week. Will someone please tell he all the ways this might work? I know wine, I know pairing, I have no clue how this would work or how much I should ask for compensation? By the day the hr? I was thinking I would look over the menu, select what wine type with each dish, then meet with the distributor ask for some wines in the price range we are looking at in that type and pick the wine that complements the dish best. (but is this how picking all the wine for a new restaurant is?) Someone please help me and let me know what to expect?!!!!  excited and freaking out a little!

By the hour, always. You'll be a consultant, and consultants charge by the hour. If this man knows you so well that he wants your help for his team then he must be aware of your expertise. That being the case, charge an expert's fee. You are in Dallas. I cannot imagine an expert in Dallas consulting for under $50 an hour.
