I live just over the border in MA. CMS is a great quality manufacturer. A small co with a few empoyees. One thing to consider is shipping into your cost analysis. I've seen the towable model 300 and its first rate.

This has come up before. Try the Restaurant Professionals Forum. The folk there have great practical experience and advice. It is truly a wealth of information for someone starting out. Good luck on your enterprise!
