What I'm a wonderin' is........is anyone but me familiar with the dish........."Cow in the Garden"? I've had this pure comfort food dish since my early years, but have not seen it on a menu or mentioned by anyone anywhere, other than a few folks in this neck of West Virginia...from Morgantown extending ovr to the Ohio River Valley north of Parkersburg. It's a variation on Creamed New Potatoes and Peas.


Cow in the Garden

3/4 lb chipped dried beef, cut into thin strips


2 lbs new potatoes


1 lb package frozen green peas or 1 lb fresh shelled

1 stick butter

6 scallions finely minced

5 tablespoons flour

1 pint heavy cream

1/2 cup milk


salt and pepper to taste.


Cut thin strip of peel around the middle of each potato. Add to a dutch oven of boiling salted water and boil approx 25 mins. Add grean peas to potatoes and water and boil approx 10 minutes more. Drain water from vegetable and set aside in colander. In now emptied dutch oven, melt stick of butter and add minced scallions. Saute' until slighly transparent. Add dried beef strips and saute another 2 minutes. Add flour and stir constantly and make a roux, browning the roux very , very slightly. Add cream, milk and salt and pepper to taste, stir until slightly thickened. Add potatoes and peas and stir for about 5 more minutes. Serve as a main dish over biscuits or bread or as a side dish.


Do not eat this on a day that you have to pour yourself into a tight pair of jeans.

    Dem's some good lookin ingredients and the recipe looks good as well. I've never heard of a dish by that namwe but it sure looks good!

      Welllllllll CP, y'all come on up heah, cuz I'm fixin' a pot of 'em now. I reckon I have plenty to go around.(and still will have some great leftovers for a couple more messes)

        I ate cow in the garden once. I'd have had it more than once but it was the onliest cow we ever found in our garden.

                    One of these days I hope to figure out this computer.
                    My mother use to fix creamed potatoes and peas. Never dried beef, it sure sounds good. My mother would cream many things such as creamed carrots, creamed spinich. sure miss her.

                      Man-o-man, Janeen, that sounds like heaven about now!

                      John had never had creamed chipped beef until several weeks ago. A friend of ours gave me some dried beef from Weaver's of Lebanon PA, which is what motivated me to make it. I made the "Southern buiscuits" that Cook's Illustrated did last year, and put peas in the CCB. However, I took the box of frozen peas and simply thawed them in a mesh sieve, and added them to the nearly finished CCB for the last 3 minutes of simmering. At least for frozen peas, that was all the cooking they need. Mom & Dad overcooked the peas when I was little, causing me to call them "powder balls." Mom's brother used the same term about 40 years before I did, so that comment caused a reduction in cooking time. See if you like the frozen peas only warmed up. Great texture that way!
