Hood premium soft serve premix

I hear, but don't know that this is the secret behind some of the great New England soft serve joints. Soft serv can be so bad that I don't finish it, such as that served on cruise ships, made from a powder I think, below average but ok like at McDonalds, or wonduuurrrrfulllly smooth,rich, and creamy as at Ronnies in Auburn Massachusetts. Is it the freezer, the mix or both?
