Just made it yesterday from the last of my Thanksgiving turkey, (or the stock, and some meat from it that I fished out of the freezer). Mine was a modified recipe but the basic is as follows:
One clove of garlic, chopped
One whole oninon chopped
2 Jalepenos diced
1-1/2 tsp chili powder
6 cups chicken stock (homemade is best)
1 can chopped tomatoes (w/ juice)
2 cans pinto beans, drained and rinsed
6 Corn Tortillas (cut in half, then in 1/4" strips, fry in oil until crisp)
( I also add 1/2 tsp of Cumin, and Cilantro)
Saute' the onions, garlic, and peppers in oil. Add the chili powder (and cumin), cook for a minute or two, add stock, tomatoes, beans. Bring to a boil and simmer for 10 minutes (minimum).
Serve w/ tortilla strips, cilantro and a dollop of sour cream.
