RE: Whats your favorite Marinade?
I wouldn't normally marinate as tender a piece of meat as a filet. I'd more than likely just salt and pepper the beef. However, a simple marinade that I might use would be garlic, black pepper, olive oil and some white wine. Two things could be added: ground cumin and ancho chili powder. I'd rub the steaks with the smashed garlic, the black pepper, the cumin and the chili powder, put them in a ziploc bag and then add the oil and wine. Then I'd stick them into the refrigerator for two hours, turning them over once.
