Whats your favorite Marinade?

Hi Folks,

We are going to have some filets on the grill tonight for dinner and my wife asked me how I wanted them marinated. Well, I thought this is a good one for the Roadfood crew. Just looking for some ideas to see what everybody likes.

I wouldn't normally marinate as tender a piece of meat as a filet. I'd more than likely just salt and pepper the beef. However, a simple marinade that I might use would be garlic, black pepper, olive oil and some white wine. Two things could be added: ground cumin and ancho chili powder. I'd rub the steaks with the smashed garlic, the black pepper, the cumin and the chili powder, put them in a ziploc bag and then add the oil and wine. Then I'd stick them into the refrigerator for two hours, turning them over once.

To be honest, I prefer filet untainted. Just wrap it in bacon and grill it but if you prefer marinades here are a few of my simple faves.

1 - Italian salad dressing mixed with a ton of crushed red pepper
2 - red wine with garlic, onion, black pepper, thyme, worcestershire (optional pinch of sugar)
3 - same as above but with balsamic vinegar intstead of red wine

Michael, I agree, I wouldn't normally marinate a filet either, however, the DW apparently wants to ;) So, thats why I figured I would ask here. If I can get her to use something relatively mild it wont 'screw up' the nice piece of meat!

Thanks for the suggestion. Read my reply to Michael, I normally wouldn't, but, since DW wants to marinate, something simple is probably best.

I can't afford the more expensive cuts of beef, but when I marinate a cheaper cut in a good italian dressing (I like Krafts House Italian), it comes out so good on my counter top grill!

I marinate my meat in pineapple juice, soysauce, brown sugar, cayenne pepper. This is a wonderful mixture. I save the salt until right before the meat is done.

OOPS sorry......I add canola oil to this mixture too and put all in a ziploc bag along with the steaks. This is awesome.

Just to toss in my 2 cents, here's one I use for chicken breasts on the grill...

2 T extra virgin olive oil
2 T fresh lime juice
1 t oregano leaves
1/2 t granulated garlic
1/2 t crushed red chili pepper
1/4 t paprika
1/4 t dry mustard
1/4 t oregano leaves
1/4 t ground cumin
1/4 t freshly ground black pepper

makes about 1/4 cup

* I normally double the recipe for 6 breasts..

Personally.. I like my filets grilled then I pour my own sauce on them.. I carmellize onions.. then put in some sour cream.. and make a sauce.. it's soooo good

A friend of mine's mother used to own a truckstop near Roswell in the '40s and '50s, and she taught me a marinade that I use regularly: cold strong brewed coffee, a little soy sauce, a teaspoon or so of molasses, a lot of garlic.

I have posted this a few tmes so any of reading this again sorry for the repost.

Probably the best pre cook marinade is anything citrus based. Pinapple or orange juice are my personal faves. While they do not really impart much flavor (unless you add soy or teriyaki or Worstceshire), they break down any connective tissues guaranteeing you a better experience.

If you are marinading for flavor on a filet, I would suggest a mix of hearty red wine (not crappy stuff, vino you would drink), orange juice and a splash of teriyaki. Although a filet is the most tender steak it also has the least flavor and really needs a suace or marinade.

If you want simplicity though marinade for about 1 hour turning once in orange juice. Prepare some garlic steak butter (not difficult at all) and serve sizzling with a big pat on top. Aspargus in hollendaise or broccloli in cheddar are good accompaniments. Of course a large tater is often standard, but I find veggies a better match.

I always like one I make with red wine, brown sugar, fresh ginger, soy sauce, and plenty of garlic.

Coat the filets with oyster sauce(no MSG type)sprinkle on onion powder and some fresh garlic. Let it sit for a couple of hours. The crust that forms over high heat is superb! Real wood or charcoal really helps for this one.
I like aggressive seasoning with filet as it doesn't have near the beef flavour as other cuts.

I cut through the fat rings of the steak (so they don't curl up), stab each one numerous times with a fork and douse with Lea & Perrins Worchester Sauce. The longer the better. That's it.

I'm with the majority. . . marinade a fillet? Naw.
I don't marinade steak, fish, or any piece of meat I'm just going to sear.
I usually only marinade meats that will be cooking a long tiime.

Soy sauce, white pepper, chopped garlic, balsamic vinegar, olive oil, little bit of lime juice, and fresh ground pepper...kinda salty, but sure is tasty after being grilled...

I use the Annie's Natural brand of salad dressings that are vinegar free ... I have also found them to be great for adding flavor to home fries.

spice classics meat tenderizer. blue container only .99$ wiht a little onion and garlic powder. on steaks just a little bit but on chicken or pork i but alot. somebody tell me they have tried this because i keep getting compliments on how good a cook i am when all i do is not ruin a piece of meat

the only steaks I'll marinade are sirloin tip or London broil. best marinade I've found is Soy Vei veri-veri teriyaki (www.soyvei.com.) For seasoning before grilling I use Reese's steak salt with a little extra pepper.
