my dream is to open a family style restaurant, formerly very common in the South, on the Big Island of Hawaii. simple updated menue, lots of fresh, locally grown and organic food items, served to communal tables with a fixed price for lunch and dinner. Wine and Beer license and minimal corkage fee.
the objective is to bring simple home cooking back to communal dining tables where folks can eat, drink and get to know one another while enjoying a constantly changing menue.
this stye of dining has almost disappeared from the American scene giving way to more elaborate, costly, and often forgettable dining experiences.
