If you didn't get the answer to the first Guess The Pie, it was a Shoo-Fly Pie.

This one is also a pie that I have never eaten. I have decided that life is to short, I need to try new things, PIE was the first thing that came to mind!

I will give a hint since this first picture kind of looks like a pizza:

HINT #1: It is NOT a pizza!



HINT #2: That is nuts you see on top and there is fruit among other things inside.

After we have a few guesses I will post a picture of a slice of the pie but that will almost give it away!

I'm guessing a Japanese fruit pie which my grandmother used to make and you can find it K&S cafeteria here in Cary.

I remember the first time I tasted Shoo-Fly Pie, when I was a college student in Philadelphia decades ago..it was so sweet, I thought that I would need an insulin transfusion!

Kudos to the poster who guessed the pineapple pie. Hard to tell whether any pineapple was present in the pie from the posted picture.

Yea, he must have made a lucky guess! Here is a picture of the pie cut and the recipe. We tried it before it was compleatly cool, I think it will be better when cool as the top part is more like a custard.

1 (9") unbaked pie shell

PINEAPPLE LAYER:

1/3 c. sugar
1 tbsp. cornstarch
1 (8 oz.) can crushed pineapple with juice

CREAM CHEESE LAYER:

8 oz. cream cheese, softened
1/2 c. sugar
1 tsp. salt
2 eggs
1/2 c. milk
1/2 tsp. vanilla
1/4 c. chopped pecans

Combine sugar, cornstarch and pineapple plus juice. Cook over medium heat, stirring constantly until thick. Cool. Blend cream cheese, sugar and salt in mixer. Add 2 eggs, one at a time, beating after each addition. Blend in milk and vanilla. Spread cooled pineapple layer over bottom of pie shell. Pour cream cheese mixture over pineapple; sprinkle with pecans. Bake at 400 degrees for 10 minutes; reduce heat to 325 degrees and bake for 50 minutes. Cool.

Thank you, Butch! This one really sounds good. I will add it to my recipe file and make it this weekend.

I have one for you; this sounds bizarre but it really is good. People can't figure out what's in it when they eat it for the first time. I got this recipe from a man at our church back home who is retired and makes pies for a little extra money. I used in it one of my weekly cooking columns when I wrote for Public Opinion newspaper in Chambersburg, PA. Here is Rennie Hall's pie:

3 cups diced rhubarb
1 small can crushed pineapple, drained
1 tablespoon lemon juice
1 1/4 cups sugar or more (gotta taste it to make sure)
dash of salt
2 3/4 tablespoons instant tapioca
1/8 teaspoon cinnamon
Crust for 9-inch double-crust pie
Mix all ingredients, place in crust, dot with butter, top with second crust, bake at 400 degrees for about 40 minutes. Good warm or cold.

That Rhubarb/Pinapple combination sounds great. I will be trying that in the near future. W have quite a Rhubarb patch here and I love the stuff.

That was a good pie but it needs to set in the fridge for a day or more before eating! We tried the first piece while it was slightly warm and I was not impressed! The next day we had it with supper and it was better but by the 3rd day I thought it was great! The pineapple will look like jam when cooking and you need to let that cool before spreading it in the bottom of the pie!
