Way back when I first came to Roadfood someone (hmmm, who was that?) suggested a restaurant idea called "State Fare". All the great regional dishes from around the country would be served there. Great idea but it would need to be a BIG place. This pit beef would be a must on the menu!
Great minds....I thought of a similar idea, but more a type of souvenir shop. It would be shaped oblong (with N,S,SW, Pacific NW, etc.) and sell items from each part of the country including conidmanets, packaged food mixes, etc. I thought of it when I was down in Wash DC in the Smithsonian gift shop. Fun to be the store buyer and do sourcing, no?
Oh, there was a "hip" restaurant in NYC called "America" that have a huge menu with regional foods.
