Some places here in centrial Illinois are selling pork Wings. In looking at them they look like a rib bone with a chunk of meat on the end. I'm thinking they come from a pig leg. Anyone selling these or have you had them? Or better yet do you know where on the hog they come from?

They sell them at a place on the West Side of Cincinnati called Take 5. They were on the appetizer menu, and I had them. There were 2 in an order, came with your choice of wing sauce, and they were huge!! My friends and I thought they were pork ribs with the meat pushed up on the bone to resemble a wing, but we weren't sure [and weren't sure how they accomplished this]. The bone looked like a pork rib bone. It wasn't any bigger than a rib bone, but with lots of meat on top. When we asked our server, her answer was "I don't know, we buy them that way".

If you want to get some , I believe they only come from commercial food vendors.

I was just at the Wurstfest in New Braunfels, TX, and they had these there. They were so delicious, I went back for more and more... OMG, if you've never tried these, they're amazing. If you have, you totally know what I'm talking about.

I need to find a local restaurant (Austin) that serves these on a regular basis. They look like too much trouble to make myself, but any place that serves these will get me as a loyal customer. I hope it's not just "fair food"...

Sysco, US Foods, and many smaller food service companies carry them. Many smaller commercial restaurant suppliers have a small section open to the retail public.

Our local Amish Farmer's market recently started selling these.

They call them "Haug Wings"

Very good - not as messy as Buffalo wings - or Baby Back Ribs

I bought a couple of these porkshanks from Nueske's a month ago when they were on sale and offered free shipping. They were fantastic and I'm now trying to track down a source here in Georgia. At their regular price, it's a no-go but, for $19.95 for two very large portions, they were (imho) worth it. Check them out. pb

I buy pig shanks for under $2.oo from the local butcher.. I cook them in a crock pot with sauerkraut, on low, for approx. 8 hours. Another recipe is using mushroom soup and a pint of heavey cream over the shanks in the crock pot. I add fresh mushrooms and onion the last 2-3 hours.

Other than the Smoking Process, What is the difference between these Shanks and what we find in the butcher cases labeled "Ham Hocks"?

Judging from this chart, none. Problem is, around here, the hocks are cut up and cured/smoked, or still connected to the ham.

Just ask your grocer to order you some whole shanks or not to cut all the shanks up.

This topic has caught my attention as well. I sense that the shank which has much bone adds great flavor, appearance and texture. We enjoy cooking with smoked ham hocks often. Guess its my Tennessee roots. I would appreciate suggestions as to where I might purchase an unprocessed hog leg. No additives, just the real thing.

I don't have an answer, but I imagine they exist ... I presume that is what they use at Harold's BBQ in Atlanta.

In Cleveland we have the West Side Market that offors any cuts of any type of meat that you want. Perhaps there is a central market near you? You might also investigate rural buthers. These are the old style guys who will supply what ever you need. The buthcer I use has sold me whole pigs and lamb, some of which he purchased from the local farmers. Good luck.

I just came back from Dallas and had the "wings". They were in a great jalaepeno BB Sauce and were great. Wish I could find a distributor in Daytona.

I just got my weekly email ad from Piggly Wiggly and there they were. $5.99/lb from Farmland, either Buffalo or BBQ flavor.
