What was the name of the Mexican restaurant in Muncie, Indiana a few years back that had "Fiesta Tuesday" where you get a plate of one of several different items and you raised a flag to get seconds of whatever you wanted or refills on the drinks and these awesome Sopapillas? Those were the days! I moved to TN, here the "authentic" Mexican restaurants fry up a flour tortilla, dust it with cinnamon & sugar and call it sopapilla. ICK!!

[:pYup,it's Pancho's Mexican Buffet. There is one in San Antonio,on Marbach Road. There used to be a couple more in town, but the Pancho's on Fredricksburg Road and San Pedro near North Star Mall closed some time ago.I used to like them.

By the way, sopapilla means little pillow in spanish. The true sopapilla is a square or rectangle of fried puffy dough.French Beingets are very much like it.The fried flour tortilla dusted with cinnamon and sugar is authentic. But here in San Antonio they are called bunelos.I don't know where these mexican cooks are from. Some may not even be from Mexico, but from,Cuba,Puerto Rico,El Salvador, etc.A tamale in Mexico is different from one elsewhere in Latin America.

I did not think Pancho's made it as far north as Muncie. There is a thread about Pancho's here somewhere.
