The reason I am bringing up this post is because I recently stopped at a farm market (actual farm) and bought some eggs & other items. My 19yr old son (Jerad) played with baby goats,as he never saw kids in person before (city boy) lolzzz The next morning I was cracking a brown egg and it was the thickest shell I ever encountered.lolzzz It's been a long time since I had farm fresh brown eggs, where I saw the chickens scratching the ground. I normally buy white eggs out of the grocery store and their shells are thin.

I certainly am not the best regarding the taste test but I honestly cannot tell the difference. I am sure some can or there would not be a market.

Here in New England most of our eggs are brown. I once heard that it was hard to get a brown egg south of R.I. not sure about that today.

The New England egg council had an advetizeing campain that said Brown eggs are local eggs and local eggs are fresh.
I get a lot of fresh eggs from a neighbor most are brown, with a very deep yellow color yolk. Some eggs are also greenish in color and I've had some that were light blue with spots on them. There all good. Chow Jim

Brown eggs are from Rhode Island Red chickens, I've been told. The thickness of the shell depends on how much calcium the chicken has been fed; more calcium equals thicker shells. What the chicken eats also affects the color and taste of the egg yolk. I prefer brown eggs from our local co-op myself.

I prefer brown eggs and probably because I grew up with them --- my mother always bought them directly from a family that had a few chickens. My husband and I have continued the "tradition" by buying ours from a family who lives out in the country as we do.
To me, the yolks from the fresh brown eggs seem to be more flavorful and rich. Much of this likely has to do with the fact that these eggs we buy are fresh as they can be.

Thick shells are an indication of high in minerals diet for the chickens---and shell color is determined by the type of chicken you get your eggshells---chickens that lay white eggs and get to scratch for bugs---and have a little crushed oyster shell added to their scratch--will have shells as thick as any brown egg--and will taste just as good--i still buy brown eggs because i too, grew up with Rhode Islands Reds.

No difference what so ever. I have chickens and prefer the bantam eggs myself. Bit of salad...a fried bantam egg (slightly larger than a quail egg)...mustard vingarette...glass of wine and my wife of twenty five years across the table...IT GETS BETTER THAN THIS?

Now duck eggs are a whole new idea...richer...more flavorful and better for you.

I have a dozen brown and green on my desk. Been ages since I've had brown eggs as I buy mine from the grocer mostly as well. My co-workers that brought them to me said the girls finally quit molting so they're laying again...just what does that have to do with anything?? Don't answer I'll search for myself. Any rate can't wait to try them.

Correct, thick shells are a function of the feed, etc. I live in a house that is over 210 years old and at one time was a chicken farm. Almost every place I dig in the yard I find oyster shells.

Only in the summer, when the chickens feed on the bugs in the manure pile. Those yolks get really dark and rich.

We had bantams, too, until something started killing them off. If anyone is wondering, bantam eggs are about half the volume of a large size egg. They make a great 5 egg omelet.

Our bantams produced brown, green and blue eggs - they all taste the same.

Personally we have brown egg layers here on our farm.... i really enjoy the taste of a brown egg over store bought white ones....

There is no difference in white Vs brown, just another breed of chicken as has been stated.

The blue eggs are a different matter. These are diet eggs. You will lose weight eating them as they are very tiny and you will have to climb many trees to get enough even for a small omelet while fighting off angry robins every step of the way.

My family grew up eating green egges (My dad had a fancy for raising chickens) I now eat the white eggs in the store...can't tell a lick of difference.

I reside on the Tennessee River in Knoxville, TN. We have several thousand resident Canada Geese. The nest all along my property. If you have the garbenzo's to get one of the eggs, they are white and huge and fertile. Probably make a killer omlet???

It is that time of year as they are honking all night long singing love songs I guess and they will be nesting in a few weeks.

If you have the garbenzo's again, try to extract one of their eggs. I have tried it before without success.

I can speak concerning "blue" eggs. My wife decided a few years back to get some young chicks to produce a few eggs. After considerable research she chose Aracuna chickens because they have very colorful feathers. They lay "blue greenish" eggs, an added bonus, she said........ She ordered 50 of those things!! Did we ever have eggs! Gave them to everyone who didn't run when they saw us coming...... We are now retired egg growers and our friends no longer run. Gave those chickens away! And, this is a true story.

There is absolutely no difference in the taste of brown and white eggs. I know some people will argue this point, but it is an illusory correlation. In other words, because they look different people assume the MUST taste different and then they perceive a difference that really isn't there.

If you don't believe me, I suggest you do a double-blind taste test. Buy white and brown eggs -taking care that they are the same freshness. Have a person break them each into a bowl out of sight of the cook and the taster. The cook should cook them exactly the same as much as possible and serve them the same as much as possible.

Blue eggs, green eggs, brown or white- no difference in taste if the hens have all been given the same feed
but duck eggs are the best eggs for using when you are baking! I didn't think I would like them- but WOW whatever you are making and baking comes out great. All of that was a long time ago for me- when we lived in upstate NY.
But here in Dallas- kind of hard to find fresh duck eggs.
We did raise a goose once, here, though.......

All I know is out here in AZ, the stores charge more for Brown Eggs than White Eggs AND, when you watch the cooking shows on Food Network, they all use brown eggs!

There is a difference in taste between Farm Fresh (brown or white) and super market eggs. Super Market eggs are usually storage eggs and do lose the fresh taste.
 
A fresh egg boiled, isn't great for peeling (shells are hard to get off).
Darker yokes are usually found in Free Range chickens but feed with lots of greens; thrown in the chicken run will also result in dark yokes.
Grit (fine gravel) is also a feed requirement otherwise you may end up with undigested feed spots in a egg.
Ducks are one of the best birds to have around a farm to keep the flies and bugs down. I just can't bring myself to eating a duck egg.

Personally, I buy the organic, free roaming, pasture raised brown eggs that have fairly thick shells from my local Wholefoods. They come from local farms within a hundred miles from Dallas. They're delicious!
 
The eggs that are very light blue, green, and tan in color usually come from Araucana chickens which are smaller, "scrawny" looking birds. They're the same kind of chickens Martha Stewart raises. IMHO, they're the best tasting but, also the hardest to come by. You have to do a little work trying to find someone raising them.
 
Deep orange yolks (as found in Europe) are a result of Marigolds fed to the chickens.

When hard boiling brown eggs, they are difficult to peel. No difference otherwise that I can tell.

The color of the shell doesn't effect the taste of the egg.  It is the color of the yolk that is important.  I am on a constant search for bright orange yolks just like the White Leghorn eggs that my grandmother's chickens produced.  I have found eggs like this a couple times in central Indiana, but not recently.  On my grandmother's farm we always ate the pullet eggs(smaller than hens eggs).  My grandmother saved the largest & best eggs for her paying customers.
