For fresh lumpia one of my brothers liked the ketchup sauce. My Mom made it with equal parts of banana ketchup & vinegar, she would add a tsp of sugar & tsp of water. For lumpia shanghi & fresh lumpia, most of my family preferred the vinegar soy sauce for dipping purposes. We make it using equal parts soy sauce & vinegar. For instance I made it on earlier this week using 1/2 cup soy sauce, 1/2 c cider or rice wine vinegar, mix with a tsp of fresh garlic & some black pepper. Sometimes we will kick it up by adding some red chili sauce or sesame oil.
