I prefer Swiss, but that wasnt a choice.. So, the default was Provolone.

cheesewhiz of course but yellow american works as well, occasionally I enjoy provolone on a steak. Unfortunately I don't have many places to chose from down here but when I lived in the land of cheesesteraks I don't recall specifying what kind of cheese taking what was served as that stores version although I remember some places did ask

While it may be cheeze, Wiz is not cheese. To paraphrase Fran Liebowitz, no cheese followed by "food" goes well with wine. And that includes Ripple and malt liquor.

Well, I would try the cheez whiz thing if it were available. It's hard enough to find even a bad cheesesteak in my area.

I too grew up in South Jersey, and the only kind that I ever had was American. Until of course I found Jims Steaks on South Street in Philly. Now it's only Wiz for me.

Here, where our cheesesteaks are primarily Italian- influenced, a cheesesteak is considered optimal if it is of thinly sliced ribeye, grilled green peppers, mushrooms and onions, a layer of Oliverio Italian Roasted Peppers in Sauce and oodles of provolone. The bun must be slathered on the inside with "grill juice" and lightly grilled. And we don't say cheesesteaks" we say "hoagies". Meatball and Italian Sausage hoagies are done similarly. HOWEVER, we also have a place called "Jersey Subs" that does more of an authentic Philly style cheesesteak and offers either Cheez Whiz or Provolone. They are quite good also, sans the use of the Oliverio peppers, but not as delightfully sloppy.

I guess it depends on where you are buying it Philly = Whiz Joisey = Provo I like both, but there is something about a cheesteak wit, dripping down your shirt as you try and eat it.

My sales are overwhelmingly Cheese Whiz..I had Sharp provolone on the cart for 1 month and sold two..Sell 20 or thirty cheese whiz per day..
