John, You trying to shock your system? There's no red meat. Looks great, put that on a piece of grilled ciabatta pane. Makes for a great light evening meal. I do mine very similar. In a wooden salad bowl mash the garlic with some seasonings and anchovies packed in oil, then add the other ingreadiants with a fresh grated sprinkle of parmesan. Just the kind of salad I like.
Lettuce is just too boring. Give me everything else, but the lettuce.
The more veggies, the better!

chop those olives a little bit and it looks like a great topping for a sandwich! or some baby spinach leaves.. or on a pork roast... or..or... mmmMmmMMmm

Sounds wonderful. Thanks, guys: I think you've inspired tonight's dinner!

I may start with a bottle of[url='http://www.mezzetta.com/Merchant2/merchant.mvc?Screen=CTGY&Category_Code=nvb']Mezzetta's Antipasto[/url], probably the [url='http://www.mezzetta.com/Merchant2/merchant.mvc?Screen=PROD&Product_Code=10700585']Mediterranean[/url], chopped up, and add:

marinated artichoke hearts and hearts of palm, chopped;
chopped shallots;
cubed fresh mozarella;
maybe some ham or, better, rendered pancetta chunks; and
grated pecorino romano.

Then I'd taste it and add whatever on John's list that it didn't have enough of.
  • (BTW, pardon the shameless plug for Mezzetta's. This is an explanation rather than an apology, because I've been using their stuff for years without finding anything that was less than stellar. They even make the only prepared pasta sauces that I don't add my own touches to.)

Tomatoes, balsamic vinegar, extra virgin olive oil, sea salt and fresh ground pepper. Nothing else needed except maybe a little fresh basil if so desired.

Tomatoes, onions, pickling cucumbers with a can of anchovies, including the oil, chopped and mixed throughout. Black pepper too!

with the fresh tomatoes hitting the farmers markets and the absolute abundance of all veggies, like squashes and eggplants an cukes- this would certainly be a great summer light dinner- grill the ciabatta- maybe even grill some of the veggies- and toss lightly in olive oil and garlic vinegrette - mabe even eliminate any lettuce at all and use the bread as if it were lettuce- making a "bread" salad!
I think that's what's for dinner tonight!

John what a great looking summer salad. I am definitely going to make this one. I don't think to make these types of salads until I see one. Thanks for the picture.
