I like greek salad in a pita, as well as all the usual schwarma, kofta, falafel. Left over chicken or lamb curry is good in pita.
I bet RubyRose has some good recommendations.

Grilled or roasted veggies is my all time favorite.
Close second is salad.

I love pitas! I like to fill them with chicken salad that I make with celery, green onion, dried cranberry, mayo, salt, pepper and curry powder. Usually add some lettuce.

I also like egg and salmon salads. Hummus with mixed vegetables is great too.

Put in mustard, two fried, all beef hot dogs, round fried potato slices, sauteed onions, sauteed peppers and call it an Italian Hot Dog on a diet.

Grilled chicken (diced) mixed with shredded lettuce, cucumber, tomato, pinch of onion, teaspoon or two of sour cream with dill, salt and pepper mixed to taste. Combine the above well and stuff into your pita.

I love some smoked nova salmon(lox), a smear of chive and onion cream cheese,and a slice of onion and tomato.I also throw a couple of capers in there...

One of my favorite sandwiches: Pita stuffed with cream cheese (or feta), avacado, red onion, ripe tomato, and top it off with crunchy alfalfa sprouts. Yummy.

I'm not a salad eater, so pitas are a good way for me to use them. If feeling virtuous, I put in smoked tofu and drizzle shabu shabu or sesame sauce over it all. Other than that, leftover chicken sates are good.

the sandwich shop my wife manages use's half a pita for their various coldcut sandwichs as well as a breakfast sandwich- eggs,cheese,bacon or sausage- they also sell the namesake sandwich in a pita instead of a roll, its made fresh, not steamed. --- back, I called the misses and asked her to bring one home for me--- its just browned ground beef with a couple seasonings, cheese, onions and tomatoes and in my case hot peppers.

I use them at home for tuna, shrimp or crab salad, cheesesteak makings or the same fillings for a taco/buritto. As with wraps,pita's are versatial with an endless list of fillings

Myra's Dionysus in Cincinnati, OH, offers many open-faced pita sammiches. My fav is the Dionite ~Feta, swiss, & cheddar cheese with olives, onions, hot peppers & herb dressing on pita bread.

Another interesting one is the Zapata Pita - A Greek-Mex sandwich of red beans & molé sauce served on pita with onions, salsa or Tzatziki sauce, & with cheddar or swiss cheese.

great suggestions - I had chicken salad, onions, lettuce, hot peppers and cucuber sauce today in a pita. It was great.

I also like PB&J in a whole wheat pita.

Will have to try the breakfast pita.

I'm surprised I don't see what I used to like, maybe it's an LA thing. There were a couple of places that mixed up a fairly spicy ground beef "patty" sort of formed in a shape that fit the pita, then added finely sliced lettuce and stuffed chunks of feta in there. It was really good. They may have added a little of that thin white sauce you get with falafel.

In the summer I serve this in my restaurant: Grilled eggplant, grilled zucchini, tomato slices, proscuitto, romaine leaves, basil leaves, arugula and pesto mayo. They sell like mad!

I like stir fry poured into a pita and eaten by hand. Quite good that way.

Anybody remember BK in the 80's? They had a salad bar back then. They offered 1/2 pita pocket ahd one tripp thru the bar.
Greek places in Dever back then had pocket pitas. A platter would be 1 pita cut in half, lettusce, tomato, onion. olives and feta. fries, sliced gyro or suvloki with Tahini. Iloved stuffed pita rather than folded.
