This one is a favorite of mine. It comes from Project AngelHeart in Denver.
Tony's Chicken Salad:
1 whole chicken, poached, skinned and boned, then cubed
30 grapes, seedless, halved
1 8 oz. can crushed pineapple, drained
3 stalks celery, chopped fine
½ onion, chopped fine
1 cucumber, peeled, seeded, coarsely chopped
½ - 1 cup mayonnaise (or Miracle Whip)
¼ c. chopped parsley
½ c. cheddar cheese, shredded
salt and pepper to taste.
Toss, chill at least 6 hours (6 to 8 servings)
