I used to work at a yogurt store/mini resteraunt and the owner was from Missouri. I loved the chicken salad and swiped the recipe.
this is all by eye:
1 10 oz canned white chicken (or rotisserie chicken)
tiny pinch of salt
miracle whip or salad dressing/mayo of choice
about 1/2 tsp of powdered mustard
about 1/4 to almost 1/2 tsp of taragon (start light the first time, too much taragon will overpower the taste and ruin it)
about 1/8 tsp white pepper
you can add a little lemon juice if you like, I normally do not.
mix it all up and make sure it looks like there is a little too much mayo. cover and let sit in fridge overnight, the flavor really comes out if it has had a night in the fridge. the extra mayo is because the chicken will suck up the mayo and can dry out, so i always make sure there is a little more than i would want if i were to eat it on the spot after making it.
at the resteraunt we also added white grapes cut in half. i almost never do that at home, but you could also add fresh apple chunks.
surprisingly the canned white chicken that i normally buy is from walmart for around 2.30 per can. it's much cheaper than hormel or swanson, etc. and it actually is a higher quality - go figure.
