I, for one, hope you'll continue to contribute here, particularly in the recipes section.
As for Katz's, Marc Katz, one of the family, opened a place in Austin years ago. Barry, his son, runs the place in Houston. Long story, but all use the same recipes, although I'm quite certain the ingredients available in Texas don't compare to what is available in NYC.
It's our only real place down here, though, as to which Lone Star can attest.
